Abstract

Edible potato based compsn. comprises a mineral salt, nutmeg and egg yolk. The compsn. can be deep-frozen, and used without thawing. A potato base done to a turn, with a tendency to feculence and salted during cooking, is dehydrated by mixing at 70-80 degrees C with the above ingredients to give a maleable, homogeneous paste which is then given the shape of a fruit. The fruit shaped prod. is then covered with beaten egg white and a piece of macaroni is used as a stalk if the desired shape is a pear or an apple.
