Abstract

La invencion se refiere a un novedoso uso de conservadores cationicos y preparaciones de acuerdo a este novedoso uso; puede usarse un conservador cationico derivado de acido laurico y arginina, en particular el ester etilico de la lauramida del monoclorhidrato de arginina, denominado a continuacion LAE, para la proteccion contra la proliferacion de microorganismos; la estructura quimica de LAE se describe en la siguiente formula (I):(Ver formula I)LAE y los compuestos relacionados son particularmente adecuados para ser usados en la conservacion de cualquier producto alimenticio perecedero; es preferible disolver directamente el compuesto antes de usarlo en uno de los siguientes solventes preferidos de grado alimenticio: agua, etanol, propilenglicol, alcohol isopropilico, otros glicoles, mezclas de glicoles y mezclas de glicoles y agua; si el tratamiento se va a realizar a un valor de pH especifico, podria ser recomendable el uso de una solucion reguladora de pH correspondiente; la composicion opcionalmente comprende componentes auxiliares y excipientes; estos componentes auxiliares y excipientes pueden ser agentes espesantes (por ejemplo goma xantano, goma guar, almidones modificados) antiespumantes (por ejemplo, dimetilpolisiloxano, dioxido de silicio), productos para obtener el pH optimo, (por ejemplo fosfatos, tartratos, citratos, lactatos), colorantes (por ejemplo, curcumina, tartrazina, eritrosina), y aromatizantes; se prefiere que la composicion conservadora contenga LAE en una cantidad de 0.0001% a 1% en peso, con relacion al peso total de la composicion conservadora; se prefiere particularmente utilizar la composicion de la invencion para la conservacion de productos carnicos, por ejemplo, carnes, aves, pescado, crustaceos, hortalizas, verduras, emulsiones, salsas, productos de confiteria, productos de panaderia, comidas precocidas, comidas listas para servir, productos de lecheria, productos basados en huevo, mermeladas, gelatinas, bebidas, jugos, vinos y cervezas.
