Abstract

Un método para producir hexosa oxidasa por la tecnología del ADN recombinantes, hexosa oxidasa recombinante y el uso de tal enzima, en particular en la fabricacion de productos alimenticios tales como masa y productos lácteos, almiento animal, farmacéuticos, cosméticos, productos de cuidado dental y en la fabricacion de lactonas. Las fuentes adecuadas de ADN que codifica para la enzima son las especies de algas marinas incluyendo Chondrus crispus, Iridophycus flaccidum y Euthora cristata. En las modalidades utiles, la hexosa oxidasa recombinante se produce por Pichia pastoris, Saccharomyces cerevisiae o E. coli.
