Abstract

La invención tiene por objeto la utilización, como agente apto para controlar la propagación de la cristalización de maltilol presente en una confitería, de moléculas que tienen un peso molecular superior a 1300. Esta utilización se aplica en particular a la preparación de azúcares cocidos y de artículos semicristalizados.
