Abstract
La presente invención se refiere a una composición de colorante azul natural, que comprende: a) una fracción selectivamente aislada de un juego o extracto de una fuente natural que comprende al menos una antocianina diacilada; b) una solución reguladora, en donde la solución reguladora tiene un pH DE 6.0 a 8.0; y c) un ion metálico o sal del mismo, en donde el ion metálico o una sal del mismo tiene una concentración de 0.25 a menos de 0.5 veces la concentración de la antocianina diacilada.
