Abstract
La presente invención se refiere a cepas de levadura novedosas de Saccharomyces cerevisiae capaces de multiplicarse en un substrato que comprende por lo menos un azúcar C5 con una velocidad e índice de multiplicación compatible con la producción industrial de levadura; también se refiere a cepas novedosas que, cuando se cultivan, hacen posible obtener levaduras que tienen una eficiencia de aplicación, es decir una eficiencia que es satisfactoria en aplicaciones y usos de interés en industrias tales como la elaboración de pan, producción de biomasa, producción de sabor, la producción de metabolitos secundarios, producción de proteínas, producción de etanol, producción de cerveza, vitivinicultura o la producción de extracto de levadura.
