Abstract

La presente invención se refiere a un sucedáneo de manteca de cacao libre de grasas trans y un proceso para su producción que tiene menor cantidad de ácidos grasos saturados que la manteca de cacao, sucedáneos de manteca de cacao común, y grasas con ácido láurico, para aplicaciones de revestimiento y moldeado en productos de chocolate con características de textura, brillo y perfil de fusión adecuadas, y una buena velocidad de cristalización durante un proceso de enfriamiento sin templado.
