Abstract

La presente invención se refiere a una composición en forma de un gel para la preparación de un producto alimenticio, composición que comprende a) agua una cantidad de 30 a 70% (en peso de la composición total); b) saborizantes en la cantidad de 1 a 40% ( en peso de la composición total), c) sal en la cantidad de 10 a 25% ( en peso de la composición total) y d) agentes gelificantes en la cantidad de 0,15 a 12% ( en peso de la composición total), en las que los agentes gelificantes comprende al menos agar y xantano. Un proceso para preparar una composición en forma de un gel para la preparación de un producto alimenticio caracterizado porque comprende los pasos de: a) agregar agentes gelificantes, incluyendo al menos agar y xantano al agua y mezclar, b) calentar a una temperatura de al menos 75°C preferentemente al menos 80°C, c) añadir sal y saborizantes y mezclar, d) calentar a una temperatura de al menos 75°C preferentemente al menos 80°C durante un tiempo suficiente para pasteurizar la mezcla, y e) enfriar a temperatura ambiente para formar el gel.
