Abstract

La presente invención se refiere a el uso de proteínas de guisante para sustituir las proteínas de leche en productos de confitería hechos tradicionalmente con leche, en donde la confitería hecha tradicionalmente con leche se selecciona del grupo que consiste de caramelos blandos o duros, toffrees, dulces de azúcar, dulces de leche, migas, rellenos de leche cocidos para confitería, rellenos de grasa de leche, salsas dulces cocidas con leche para coulis o recubrimientos, mermeladas de leche, productos para untar a base de leche, chocolates blancos o chocolates de leche y productos derivados de chocolate banco o chocolate de leche seleccionados de ganaches, almendras garapiñadas chocolates de cobertura, barras, dulces bocadillos, trufas, lentejas, granillo y rellenos de chocolate de leche o chocolate blanco.
