Abstract

COMPOSIÇÃO DE CACAU, E, PRODUTOS ALIMENTÍCIOS. A presente invenção se refere a uma composição de cacau que compreende ao menos 30 %, em peso, de sacarose e menos de 5 %, em peso, de sólidos de leite, sendo a composição caracterizada por compreender de 0,5 a 15 %, em peso, de uma proteína à base de plantas e de 0,5 a 20 %, em peso, de um ingrediente avolumador. São também fornecidos produtos alimentícios que compreendem a composição de cacau descrita, por exemplo, produtos de panificação, doces e produtos alternativos aos laticínios.
