Abstract

Proporcionar una composición en la que los alimentos puedan estar presentes de manera estable y que tenga una variedad de propiedades de utilización que permitan su uso para diversos fines; una composición que comprende complejos de partículas finas de alimento, en donde (a) un tamaño de partícula máximo antes de una ultrasonicación es mayor de 100 mm; (b) cuando se realiza la ultrasonicación, un tamaño máximo de partícula después del tratamiento disminuye en un 10% o más en comparación con el anterior al tratamiento; (c) cuando se realiza la ultrasonicación, un diámetro modal después del tratamiento es de 0.3 mm o más y de 200 mm o menos; y (d) cuando 10,000 partículas finas y/o complejos de partículas finas en la composición antes de la ultrasonicación se someten a análisis con un analizador de imagen de forma de partículas, un valor del percentil 10 de un valor numérico N para cada partícula fina y/o complejo de partículas finas, que se determina de acuerdo con una fórmula de cálculo que se describe a continuación, es de 0.40 o menos: N = (rugosidad ´ circularidad)/relación de aspecto.
