Abstract

La presente invención se refiere a un proceso para la manufactura de una confitería aireada congelada con una saturación de al menos 15% en volumen y en donde el número de longitud promedio de los cristales de hielo es a lo sumo 100 µm, que comprende las siguientes etapas: a) proporcionar una confitería aireada congelada con una saturación de al menos 15% en volumen y en donde el número de longitud promedio de los cristales de hielo es a lo sumo 100 µm que comprende • 40 hasta 85 % en peso de agua; • 0.1 hasta 30 % en peso de grasa; • 5 hasta 45 % en peso de depresor del punto de congelamiento y rellenador de volumen; y • 0.1 hasta 7 % de proteína d) proporcionar un ingrediente que tiene una relación Trouton de al menos 75, como se mide en una solución al 0.2% en peso de tal ingrediente en agua como se mide a 20 grados Celsius; en donde el ingrediente es proporcionado en una cantidad de 0.001 hasta 10 % en peso, con base en el peso de la composición final; b) mezclar tal confitura congelada proporcionada en la etapa "a" con el ingrediente proporcionado en la etapa "b" para proporcionar una confitería aireada congelada de conformidad con la invención. Tal proceso resulta en confiterías aireadas congeladas con cualidades organolépticas mejoradas.
