Abstract

La presente invención se refiere a un proceso para la fabricación de un producto de confitería congelado con un recubrimiento que se puede pelar que comprende los pasos: a) proporcionar un molde a una temperatura de como máximo -10°C; b) llenar el molde con una mezcla líquida de un primer producto de confitería congelado; c) permitir que el primer producto de confitería congelado se congele parcialmente; d) extraer el exceso de mezcla líquida del molde; e) llenar el molde con una segunda mezcla líquida; f) extraer la segunda mezcla líquida; g) llenar el molde con por lo menos otro producto de confitería congelado; y después h) congelar para formar una producto de confitería congelado caracterizado porque la mezcla líquida del primer producto de confitería congelado comprende un biopolímero gelificante que se endurece químicamente; y la segunda mezcla líquida comprende una fuente de cationes divalentes.
