Abstract
Настоящее изобретение относится к замороженному кондитерскому изделию, включающему от 1 до 15 вес.% частиц зерновой муки размером от 0,1 до 1,0 мм и от 5 до 25 вес.% подсластителей. Также настоящее изобретение относится к способу получения замороженного кондитерского изделия, включающему стадии получения смеси, включающей воду, от 1 до 15 вес.% частиц зерновой муки размером от 0,1 до 1,0 мм и от 5 до 25 вес.% подсластителей; выдерживания смеси при температуре по меньшей мере 70°С в течение по меньшей мере 10 мин; пастеризации и если требуется, гомогенизации смеси; затем замораживания смеси с получением замороженного кондитерского изделия.
