Abstract

La invención está dirigida al proceso de preparación de un co-cristal de azúcar con un edulcorante natural y, eventualmente, otro agregado y con dicho producto. El proceso está relacionado con la co-cristalización de la sacarosa con un edulcorante natural en un tacho con condiciones de presión y temperaturas controladas y con la separación de los cristales de la miel. Al final del proceso se aprovecha el subproducto de la co-cristalización, para producir un edulcorante líquido bajo en calorías de tal forma que se aproveche en un alto porcentaje los insumos utilizados.
