Abstract

La presente invención se relaciona con el producto de confitería congelado que comprende hasta el 20% en peso de grasa, hasta el 25% de sólidos no grasos de la leche (MSNF), entre 5 y 40% en peso de agente endulzante y hasta 3% de estabilizador y/o emulsionante, caracterizado porque el citado producto de confitería congelado comprende además una composición de grano entero hidrolizado y una alfa-amilasa o fragmento de ella, alta-amilasa o fragmento de la misma que no muestra actividad hidrolítica hacia las fibras dietéticas cuando están en estado activo.
