Abstract

La presente invención se refiere a un procedimiento para producir glucoamilasa del género de Rhizopus, capaz de la hidrolisis eficiente del almidón crudo, dicho procedimiento caracterizado por las etapas de producir tal glucoamilasa por el cultivo de la levadura, E. coli cepa WA802 o Bacilus subtilis en un medio líquido y recuperar la glucoamilasa desde el cultivo, dicha levadura siendo una que se ha transformado por un vector recombinante el cual es capaz de expresión y que comprende un gene estructural de glucoamilasa derivado de un hongo del género Rhizopus.
