Abstract

1. Procedimiento para la producción o el mantenimiento de un cultivo estable de un microorganismo del género Lactobacillus, que esencialmente posee al menos un elemento genético extracromosómico que estimula su capacidad para producir ácido láctico a partir de lactosa y controla su capacidad para metabilizar la N- acetil-D-glucosamina, caracterizado porque en su realización comprende sembrar una cepa del microorganismo en un medio acuoso, previamente esterilizado, que contiene preferentemente 5 a 10% de materia seca, formada por una fuente de nitrógeno asimilable, sales, oligoelementos, vitaminas y esencialmente N-acetil-D-glucosamina como fuente de carbono asimilable, incubar el medio sembrado a una temperatura favorable al crecimiento del microorganismo hasta que su densidad óptica corresponde preferentemente a un semicrecimiento logarítmico y mantener el medio a una temperatura baja, de preferencia entre 5 grados y 10 grados centígrados.
