Abstract

The invention relates to the food industry, namely to a process for producing liver paste.The process, according to the invention, comprises cuttering of pork or beef liver and pork or beef meat up to a homogeneous mass at the temperature of 0…+4°C during 2…3 minutes, obtaining of a fat emulsion by emulsifying the fatty pork with broth at the temperature of 30…35°C with the addition of soy protein isolate and milk powder with stirring, mixing of the obtained masses with the addition of salt and spices, cuttering of the mixed mass at the temperature of 12…16°C for 5…7 min, formation and thermal treatment of the resulting paste, in which the ratio of fats to proteins is of (0.7…0.8):(1.0…1.2).
