Abstract

Invenţia se referă la industria vinicolă, şi anume la un procedeu de fabricare a vinului roşu sec cu un conţinut sporit de substanţe biologic active.Procedeul, conform invenţiei, include zdrobirea şi desciorchinarea strugurilor cu un conţinut de zaharuri de cel puţin 220 g/L cu obţinerea mustuielii, adăugarea în aceasta a seminţelor proaspete de struguri de soiuri roşii în cantitate de 30…50% din conţinutul acestora în mustuială, fermentarea-macerarea mustuielii cu căciulă plutitoare în decurs de 15…21 zile la temperatura de 24…28°C, separarea vinului tânăr şi limpezirea acestuia, totodată fermentarea-macerarea include fermentarea tumultuoasă în decurs de 5…7 zile cu amestecare de 2…3 ori pe zi în decurs de 10…15 min şi postfermentarea cu amestecare de 6…8 ori pe zi în decurs de 15…20 min sub o presiune de 50…150 kPa a dioxidului de carbon.
