Abstract

Invenţia se referă la industria vinicolă, în particular la fabricarea vinurilor spumante.Procedeul conform invenţiei include: fabricarea vinurilor brute seci pentru vinurile spumante, fabricarea vinului brut sec Muscat, cupajarea lor în raport de 10…40% : 60…90%, tratarea cupajului, prepararea amestecului de acratofor din cupajul tratat de vinuri brute seci, licoare de rezervor şi maia de cultură pură de levuri, fermentarea secundară, refrigerarea, administrarea licorii de expediţie, filtrarea şi îmbutelierea izobarotermică a produsului finit. Totodată vinul brut sec Muscat se fabrică cu macerarea mustului pe boştină în decurs de 6 h la temperatura de 16…18oC şi cu fermentarea mustului pe suşa de levuri Saccharomyces cerevisiae Rară Neagră - 2 cu decantare imediată de pe levuri, fermentarea secundară se efectuează în primele 4 luni după fabricarea vinului sec Muscat utilizând suşa de levuri Saccharomyces cerevisiae Rcaţiteli - 6, iar licoarea de expediţie se prepară pe baza vinului sec Muscat sau mistelei Muscat.Rezultatul constă în majorarea calităţii produsului finit.Figuri.: 6
