제1도는 반황의 동력조건과 해동조건의 변화가 가용성 단백질의 양에 미치는 영향을 나타내는 그래프,
제2도는 난황의 동결 온도와 레오미터값과의 관계를 나타내는 그래프,
제3도는 난황을 함유하는 기포성 수중유형(O/W) 에멀젼 조성물의 지방함량과 입속에서의 용해와의 관계를 나타내는 그래프.
Claims (6)
- 동결 변성후의 레오미터값(직경이 10mm인 플런저를 사용)이 20~100g/cm2임을 특징으로 하는 동결 변성 난황.
- 난황은 -20~30℃에서 동결시켜 -10~-80℃에서 5일~60일동안 보존한 다음, 동결 난황을 0~10℃에서 해동시킴을 특징으로 하는 제1항에 의한 동결 변성 난황 제조방법.
- 동결변성후의 레오미터값(직경이 10mm인 플런저를 사용)이 20~100g/cm2인 동결 변성 난황 1~2Owt.%를 함유함을 특징으로 하는 수중유형(o/w type)에멀젼 조성물.
- 제3항에 있어서, 동결 변성 난황의 량이 4~10wt.%인 수중유형 에밀젼 조성물.
- 제3항에 있어서, 기름 성분의 량이 조성물 전체 중량에 대하여 약 30wt.%인 수중유형 에멀젼 조성물.
- 제3항에 있어서, 조성물은 크실로오스 글루코오스, 소르비톨 및 수소 첨가 맥아시럽으로 된 군으로부터 선텍되는 당류 및/또는 당 알코올을 복수로 함유하는 것인 수중유형 에멀젼 조성물.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
