Claims (14)

  1. 결정형 가요성 글루코우즈 이소머라제가 가교결합에 의해 수불용성 형태로 전환됨을 특징으로 하는 결정형 글루코우즈 이소머라제.
  2. 제1항에 있어서, pH가 1 내지 10범위의 묽은산 및 알칼리용액중에서 불용성임을 특징으로 하는 글루코우즈 이소머라제.
  3. 제1항 또는 2항에 있어서, 글루코우즈, 과당 및 다른 당의 수용액중에서 불용성임을 특징으로 하는 글루코우즈 이소머라제.
  4. 제3항에 있어서, 결정체가 승온에서도 상기 당용액 중에서 불용성임을 특징으로 하는 글루코우즈 이소머라제.
  5. 제1항에 있어서, 천연 기질인 글루코우즈, 과당 및 크실로우즈의 농축액중에서도 이들당의 이성화 반응을 촉매함을 특징으로 하는 글루코우즈 이소머라제.
  6. 제1항 내지 5항중 어느 한 항에 있어서, 결정체를 구형, 시트형, 밴드형 또는 이들의 배합물형과 같은 대형체내에 화학적으로 또는 물리적으로 결합시킴을 특징으로 하는 글루코우즈 이소머라제.
  7. 수불용성이고, 실질적으로 순수한, 가교결합된 결정형 글루코우즈 이소머라제를 함유함을 특징으로 하는 과당의 연속제조에 유용한 반응장치.
  8. a) 암노늄염, 아민 또는 아미노산과 같은 적어도 하나이상의 아미노 그룹을 함유하는 화합물을 디알데하이드의 첨가전 또는 가교결합 반응동안에 결정형 이소머라제 현탁액중에 가한후, 디알데하이드를 결정형 이소머라제 현탁액중에서 가한 다음, b) 물 또는 다른 액체를 사용하여 가교결합된 결정체를 세척하여 시약잔사를 제거함을 특징으로 하여, 수불용성 가교결합된 결정형 효소를 제조하는 방법.
  9. 제8항에 있어서, 효소가 글루코우즈 이소머라제인 방법.
  10. 제8항에 있어서, 디알데하이드가 글루타르-알데하이드임을 특징으로 하는 방법.
  11. 제8항 또는 9항에 있어서, 글루타르알데하이드의 양이 0.4 내지 8중량%임을 특징으로 하는 방법.
  12. 가교결합된 결정형 이소머라제를 사용하여 기질을 이의 이성체로의 전환을 촉매하는 방법.
  13. 제12항에 있어서, 기질이 글루코우즈, 과당 또는 크실로우즈이고 이소머라제가 글루코우즈 이소머라제인 방법.
  14. 글루코우즈-함유 용액을 수불용성 가교결합된 결정형 글루코우즈 이소머라제를 함유하는 반응기에 통과시킴을 특징으로 하여 과당을 연속적으로 제조하는 방법.
