Abstract

본 발명은 새로운 조성의 갈락토올리고당 혼합액의 제조방법에 관한 것으로서, β-갈락토시다제와 글루코스이소머라제를 유리 효소의 형태로, 또는 물에 녹지 않는 담체에 함께 고정화한 효소의 형태로, pH 5∼8, 온도 30∼70℃ 조건하에, 농도 30∼65%(w/w)의 유당에 작용시켜 회분식 또는 연속식으로 반응시킴을 특징으로 하는 고농도 갈락토올리고당 혼합액의 제조방법을 제공한다.

Claims (5)

  1. 효소를 이용하여 기질인 유당으로부터 갈락트올리고당 혼합액을 제조하는 방법에 있어서, β-갈록토시다제와 글루코스이소머라제를 유리 효소의 형태로, 또는 물에 녹지 않는 담체에 함께 고정화한 효소의 형태로, 유당에 작용시켜 회분식 또는 연속식으로 반응시킴을 특징으로 하는 고농도 갈락토올리고당 혼합액의 제조방법.
  2. 제1항에 있어서, 상기 고정화 효소는 β-갈락토시다제와 글루코스이소머라제를 동일한 담체 또는 서로 다른 담체에 글루코스이소머라제의 활성에 대하여 β-갈락토시다제의 활성이 1∼2배가 되도록 고정화하여 얻은 것임을 특징으로 하는 제조방법.
  3. 제1항에 있어서, 유당의 농도를 30∼65%(w/w)로 함을 특징으로 하는 고농도 갈락토올리고당의 제조방법.
  4. 제1항에 있어서, 기질의 pH를 5∼8로 함을 특징으로 하는 고농도 갈락토올리고당의 제조방법.
  5. 제1항에 있어서, 효소 반응온도를 30∼70℃로 함을 특징으로 하는 고농도 갈락토올리고당의 제조방법.
