- 쿠키 반죽을 제조하는 단계(S1):

상기 성형한 쿠키 반죽을 소성하여 쿠키를 제조하는 단계(S4);
상기 소성한 쿠키의 상면에 약과 시럽을 도포하는 단계(S5): 및
상기 약과 시럽을 도포한 쿠키를 냉각하는 단계(S6);를 포함하는 것을 특징으로 하는 약과 쿠키의 제조방법.
- 제1항에 있어서,
상기 S1 단계에서 상기 쿠키 반죽은,
박력분 밀가루, 시나몬 가루, 베이킹 파우더, 슈가 파우더, 버터, 전란, 조청 및 소금을 혼합하여 제조되어지되,
박력분 밀가루 200~300 중량부, 시나몬 가루 3~7 중량부, 베이킹 파우더 1~5 중량부, 슈가 파우더 100~150 중량부, 버터 100~150 중량부, 전란 30~70 중량부, 조청 5~15 중량부 및 소금 0.5~1.5 중량부인 것을 특징으로 하는 약과 쿠키의 제조방법.
- 제1항에 있어서,
상기 S5 단계에서 상기 약과 시럽은,
조청, 물, 생강, 꿀 및 유자청을 혼합하여 제조되어지되,
조청 500~600 중량부, 물 100~200 중량부, 생강 5~15 중량부, 꿀 15~25 중량부 및 유자청 5~10 중량부인 것을 특징으로 하는 약과 쿠키의 제조방법.
