Claims (5)
- (1) 물 100 중량부에 소머리고기 8 내지 16 중량부를 3 내지 5 덩어리로 나누어 1 내지 3분 간격으로 3 내지 5회에 걸쳐 넣은 후 45 내지 60℃까지 가열하는 단계;
(2) 상기 단계 (1)의 소머리고기를 건져내어 물로 세척하는 단계;
(3) 물 100 중량부에 사골 10 내지 20 중량부를 3 내지 5 덩어리로 나누어 1 내지 3분 간격으로 3 내지 5회에 걸쳐 넣은 후 45 내지 60℃까지 가열하는 단계;
(4) 상기 단계 (1)의 사골을 건져내어 물로 세척하는 단계;
(5) 물 100 중량부에 단계 (4)의 사골 10 내지 20 중량부, 무 1 내지 3 중량부 및 찹쌀뜨물 1 내지 2 중량부를 넣고 90 내지 110℃에서 10분 내지 30분간 가열하는 단계;
(6) 상기 육수에 단계 (2)의 소머리고기 8 내지 16 중량부를 넣고, 3 내지 5시간 동안 가열하는 단계; 및
(7) 소머리고기 및 무를 건져낸 후, 8 내지 12시간 동안 가열하는 단계
를 포함하는, 소머리국밥용 육수의 제조방법.
- 제1항에 있어서,
상기 단계 (6)에서 소머리고기와 함께 수삼 몸통부 0.1 내지 0.3 중량부를 넣는 것을 특징으로 하는, 소머리국밥용 육수의 제조방법.
- 제2항에 있어서,
상기 단계 (7)에서 수삼 뿌리부 0.01 내지 0.02 중량부를 2시간 간격으로 3 내지 5회 첨가하면서 가열하는 것을 특징으로 하는, 소머리국밥용 육수의 제조방법.
- 제1항 내지 제3항 중 어느 한 항의 방법에 의해 제조된 소머리국밥용 육수.
- 제4항의 소머리국밥용 육수를 포함하는, 소머리국밥.
