Abstract
본 발명에 따른 발효 산삼 갈대차는 (1)갈대차의 원료가 되는 갈대잎과 뿌리를 제거한 다음, 선별한 갈대잎과 뿌리는 절단기를 이용하여 1cm 크기로 균일하게 절단하고 세척함으로써 먼지나 이물질을 걸러내어 깨끗하게 처리하는 갈대 전처리공정, (2) 산삼 향과 유용성분을 잘 우러나게 하기 위한 속성발효산삼을 제조하기 위하여 시판 식초에 산삼을 2∼시간 침지시킨 후, 건져내어 수분을 제거한 산삼을 250mmHg 기압을 유지하는 탱크에 넣고, 94∼96℃의 온도를 유지하는 증기를 부여하여 5∼7시간 수삼을 찌는 증숙(蒸熟)단계; 증기로 찐 삼(蔘)을 건조실에서 65∼75℃의 열풍을 부여하여 6∼8시간 건조하여 수분함량을 절반이하로 줄인 발효산삼을 2mm 이하로 세절하여 준비하는 발효산삼 전처리공정, (3)갈대잎을 부드럽게 하고 생 갈대잎 및 뿌리의 풋내를 제거하기 위해 증기로 갈대잎과 뿌리를 쪄내는 증제공정, (4)상기 증제공정에서 냉풍 건조된 갈대잎과 뿌리를 열풍온도 40-60℃에서 40-50분간 갈대잎과 뿌리를 탈수시켜 수분탈수 조유하는 공정, (5) 상기 건조된 갈대잎과 뿌리를 비벼 질긴 섬유질을 파괴함으로써, 갈대잎의 맑은 녹색 및 맛과 향이 잘 우러나오게 처리하는 덖음공정, (6)상기 비벼진 갈대잎과 뿌리를 저온에서부터 고온으로 온도를 변화시켜가면서 서서히 볶아서 익히는 볶음공정, (7) 갈대잎과 뿌리 및 발효산삼을 회전 덖음한 후 가향처리하여 포장하는 공정으로서, 차는 향과 맛이 중요하기 때문에 가향기를 이용하여 70-80℃로 에서 40-50분간 회전 덖음으로써 차의 향을 부가시키는 가향처리는 물론 차의 수분함량이 4∼5%가 되도록 한 후 실온에서 냉각시켜 갈대차로 포장하는 가향·포장 공정을 포함하여 이루어지는 것을 특징으로 한다.

상기 건조된 갈대잎과 뿌리를 비벼 질긴 섬유질을 파괴함으로써, 갈대잎의 맑은 녹색 및 맛과 향이 잘 우러나오게 처리하는 덖음공정,
상기 비벼진 갈대잎과 뿌리를 저온에서부터 고온으로 온도를 변화시켜가면서 서서히 볶아서 익히는 볶음공정,
갈대잎과 뿌리 및 발효산삼을 회전 덖음한 후 가향 처리하여 포장하는 공정을 포함하는 차의 제조방법 - [청구항 1] 로 제조된 발효산삼 갈대차의 유효성분을 함유하는 음료 조성물
