Abstract
본 발명에 따른 닭볶음 및 이를 포함하는 코스 요리는 한식의 우수성과 약선(고혈압에 유효한 한약재)을 접목한 새로운 약선식으로서, 일상 생활 속에서 식습관을 통해 음식문화를 즐길 수 있을 뿐만 아니라 현대인이 쉽게 노출되는 대사증후군의 하나인 고혈압의 예방 및 개선에 도움을 줄 수 있다. 뿐만 아니라 본 발명에 따른 닭볶음 및 이를 포함하는 코스 요리는 외국인의 입맛에도 맞도록 개발되었는바, 한식의 세계화와 실용화에도 기여할 수 있을 것으로 기대된다. 또한 본 발명은 한식, 고혈압에 유효한 약재를 사용한 약선, 코스 요리, 이 세 가지를 접목시켜 새로운 한식 문화를 개척해 나갈 수 있는 좋은 첫걸음이 될 것으로 기대된다.

Claims (8)
- 닭고기 80 중량부에 대하여 설탕 0.5~2 중량부를 뿌리고, 여기에 물 80~120 중량부와 표고버섯 1~10 중량부, 양파 1~10 중량부, 깻잎 1~10 중량부를 넣어 끓이다가, 삶은 밤 10~20 중량부와 볶은 은행 1~10 중량부를 넣고 끓인 후, 통깨 0.1~1 중량부와 산조인 0.1~1 중량부를 뿌려 제조한 닭볶음.
- 제1항에 따른 닭볶음을 포함하는 고혈압 개선용 코스 요리.
- 제2항에 있어서,
물 10 중량부에 대하여 식초 0.5~1 중량부, 설탕 0.5~1 중량부 및 소금 0.1~0.5 중량부를 섞어 만든 무색 초절임물; 상기 무색 초절임물에 비트 1~5 중량부를 갈아서 만든 즙을 넣은 적색 초절임물; 및 상기 초절임물에 0.1~3 중량부의 치자물을 넣음 황색 초절임물에, 슬라이스한 무를 1~3시간 동안 재우고, 상기 재운 무에 익힌 새우, 채썬 파프리카, 치커리 및 무순을 넣어 제조한 삼색무 채소말이를 추가로 포함하는 고혈압 개선용 코스 요리. - 제2항에 있어서,
얇게 썰어 구운 관자; 얇게 썰어 소금, 후추, 청주로 밑간을 하여 구운 쇠고기; 및 어린잎 채소에,
박하 끓인 물 2 중량부에 대하여 감식초 1~5 중량부, 간장 1~3 중량부 및 올리브유 1~3 중량부를 섞어 만든 드레싱을 뿌려 제조한 한우 관자구이를 추가로 포함하는 고혈압 개선용 코스 요리. - 제2항에 있어서,
결명자 끓인 물 20 중량부에 대하여 하수오 가루 1~3 중량부, 밀가루 10~30 중량부, 감자수제비가루 10~30 중량부 및 소금 0.1~1 중량부를 넣어 반죽하고 밀봉하여 20~40분 동안 숙성시키고, 상기 숙성된 반죽을 얇게 밀어서 0.3~0.8cm 굵기로 썰어서 면을 만들어 삶은 후 찬물에 식히고, 불린 검은콩 10~30 중량부를 삶아 건져낸 후 20~60 중량부의 물, 1~3 중량부의 참깨, 1~3 중량부의 산조인, 1~3 중량부의 호두 및 1~5 중량부의 잣을 함께 넣고 갈아서 만든 국물을 면에 부어서 제조한 콩밀면을 추가로 포함하는 고혈압 개선용 코스 요리. - 제2항에 있어서,
오미자 우린 물 3 중량부에 대하여 다진 산수유 0.1~1 중량부, 꿀 0.1~1 중량부 및 물엿 0.1~2 중량부를 넣고 가열하여 전체 중량이 1.5~2.5 중량부가 되면 식혀서 녹말에 버무려 오미자-산수유 다식을 만들고, 솔잎가루 0.3 중량부에 대하여 청태가루 1.5~3.5 중량부, 물엿 0.1~2 중량부 및 꿀 0.1~1 중량부를 섞어서 버무려 청태-솔잎 다식을 만들고, 다식판에 상기오미자-산수유 다식을 절반 채우고 남은 부분을 청태-솔잎 다식으로 채워서 눌러 찍어서 제조한 다식을 추가로 포함하는 고혈압 개선용 코스 요리. - 제2항에 있어서,
물 70 중량부에 대하여 각각 계피 1~5 중량부, 천궁 0.1~0.5 중량부 및 생강 1~5 중량부를 넣어 끓인 3가지 물을 모두 섞고 용안육 1~5 중량부를 추가하여 끓인 후 설탕 2~6 중량부를 추가하여 설탕이 녹을 때까지 끓여서 만든 용안육 수정과를 추가로 포함하는 고혈압 개선용 코스 요리. - (a) 물 10 중량부에 대하여 식초 0.5~1 중량부, 설탕 0.5~1 중량부 및 소금 0.1~0.5 중량부를 섞어 만든 무색 초절임물; 상기 무색 초절임물에 비트 1~5 중량부를 갈아서 만든 즙을 넣은 적색 초절임물; 및 상기 초절임물에 0.1~3 중량부의 치자물을 넣음 황색 초절임물에, 슬라이스한 무를 1~3시간 동안 재우고, 상기 재운 무에 익힌 새우, 채썬 파프리카, 치커리 및 무순을 넣어 삼색무 채소말이를 제조하는 단계;
