Claims (3)
- 생문어로부터 문어다리를 분리하여 문어다리 중심부에 있는 문어다리 흡수관을 확장시키는 1단계 공정과,
흡수관이 확장된 문어다리에 금형을 삽입하여 60~70℃의 열수에 2~3분간 침지하여 문어다리 점질물을 응고시킴과 동시에 흡수관에 공간을 형성시키는 2단계 공정과,
통상의 순대내용물 100중량부, 비린내 제거 문어먹물 25중량부, 해조류추출액 30중량부, 천연항산화제 5중량부를 균질화한 건강식 순대내용물을 얻는 3단계 공정과,
공간이 형성된 문어다리 흡수관에 건강식 순대내용물을 충전시켜 문어다리 순대를 제조하는 4단계 공정과,
문어다리 순대를 8℃~-8℃의 온도범위에서 24시간에 걸쳐 동결과 해빙을 거치되 이와 같은 조작을 3~5회 되풀이하여 발효숙성처리로 문어다리 순대를 제조하는 5단계 공정과 숙성처리한 문어다리 순대를 온도 40~45℃로 유지된 감압건조기에서 1시간 건조시켜 진공포장하는 6단계 공정을 거쳐서 되는 건강식 문어다리 순대.
- 청구항 제1항에 있어서, 해조류추출액은 미역, 다시마, 곤피, 감태, 태황, 패, 톳, 모자반 중에서 선택되는 하나 이상의 갈조류로서 원조 중량의 15~20배의 1.5wt% 탄산나트륨 수용액에 원조를 침지한 다음 온도 60~65℃로 유지시킨 상태에서 2~3시간 추출한 후 원조를 제거한 추출액을 2시간 증비하여 농축한 해조류농축 추출액임을 특징으로 하는 건강식 문어다리 순대.
- 청구항 제1항에 있어서, 비린내 제거 먹물은 문어 먹물낭을 온도 60~70℃로 유지되는 30wt%의 에탄올수용액에 40~60초간 침지하였다가 취출한 오징어 먹물임을 특징으로 하는 건강식 문어다리 순대.
