Abstract
염도가 15% 이상인 염장 해파리에서 염분을 일부 제거하는 염도 조절단계;
염도 조절된 해파리를 아미노산 및 솔비톨을 포함하는 수용액으로 처리하는 함침단계;
함침시킨 해파리와 오징어를 혼합하고 가압 탈수하는 가압 탈수단계;
가압 탈수된 해파리 및 오징어를 자외선으로 살균하는 살균단계; 및
살균된 해파리 및 오징어와 양념을 혼합하는 혼합단계;를 포함하는 해파리 오징어 혼합 젓갈의 제조방법에 관한 것으로, 본 발명에 의한 방법으로 해파리 오징어 혼합 젓갈을 제조할 경우 해파리 특유의 식감이 장기간 유지되는 장점이 있다.

Claims (9)
- 염도가 15% 이상인 염장 해파리, 물 및 30 내지 500 개의 니들을 포함하며 상기 니들의 길이가 3 내지 20 ㎜인 밤송이 형상의 볼을 함께 회전하여 해파리의 염도를 3 내지 8 중량%로 조절하는 염도 조절단계;
염도 조절된 해파리를 아미노산 및 솔비톨을 포함하는 수용액으로 처리하는 함침단계;
함침시킨 해파리 100 중량부에 대하여,오징어를 30 내지 500 중량부를 혼합하고 가압 탈수하는 가압 탈수단계;
가압 탈수된 해파리 및 오징어를 자외선으로 살균하는 살균단계; 및
살균된 해파리 및 오징어와 양념을 혼합하는 혼합단계;를 포함하며,
상기 혼합단계에서 혼합되는 양념은 살균된 해파리 및 오징어 100 중량부 대비 20 내지 50 중량부인, 해파리 오징어 혼합 젓갈의 제조방법. - 삭제
- 제1항에 있어서,
상기 아미노산 및 솔비톨은 수용액 내 0.05 내지 2 중량%인 해파리 젓갈의 제조방법. - 삭제
- 제1항에 있어서,
상기 가압 탈수단계는 함침시킨 해파리 및 오징어를 종래 염장 해파리 및 오징어 부피 대비 40% 이하로 탈수하는 단계인 해파리 오징어 혼합 젓갈의 제조방법. - 제1항에 있어서,
상기 양념은 아미노산 및 솔비톨을 포함하는 해파리 오징어 혼합 젓갈의 제조방법. - 제1항에 있어서,
상기 양념은 고춧가루 100 중량부에 대하여, 전분 0.5 내지 25 중량부, 마늘 0.01 내지 2 중량부, 생강 0.01 내지 2 중량부, 통깨 0.01 내지 2 중량부, 매실 액기스 0.01 내지 2 중량부, 올리고당 0.01 내지 2 중량부, 아미노산 0.01 내지 2 중량부, 솔비톨 0.1 내지 2 중량부 및 소금 1 내지 20 중량부를 포함하는 해파리 오징어 혼합 젓갈의 제조방법. - 삭제
