Claims (8)
- 대두 단백질을 함유하는 용액을 산성 하에서 가온 처리한 후, 이온 강도 0.02 이상, pH 4.5 이상 5.6 미만에서 가용성 획분과 불용성 획분으로 분획하는 것을 특징으로 하는 대두 단백질의 제조방법.
- 제1항에 있어서, 대두 단백질을 함유하는 용액이 탈지 대두의 가수(加水) 슬러리, 상기 슬러리로부터 얻어지는 탈지 두유, 산침전 대두 단백질 슬러리, 또는 분리 대두 단백질 용액인 제조방법.
- 제1항에 있어서, 산성이 pH 3.8∼6.8인 제조방법.
- 제1항에 있어서, 가온 처리가 30∼75℃인 제조방법.
- 제1항에 있어서, 제1항에 기재된 분획방법에 의해 얻어지는 가용성 획분으로부터 7S 글로불린/(11S 글로불린+7S 글로불린)의 비가 0.5 이상이고, 고형분 중의 클로로포름:메탄올=2:1 용매로써 추출되는 극성 지질 함량이 1 중량% 이하인 7S 글로불린 단백질을 분취(分取)하는 제조방법.
- 고형분 중의 피트산 함량이 1.2 중량% 이하인, 제5항에 기재된 방법으로 얻 어진 7S 글로불린 단백질.
- 제1항에 있어서, 제1항에 기재된 분획방법에 의해 얻어지는 불용성 획분으로부터 11S 글로불린/(11S 글로불린+7S 글로불린)의 비가 0.7 이상이고, 고형분 중의 클로로포름:메탄올=2:1 용매로써 추출되는 극성 지질 함량이 2 중량% 이하인 11S 글로불린 단백질을 분취하는 제조방법.
- 고형분 중의 피트산 함량이 1.2 중량% 이하인, 제7항에 기재된 방법으로 얻어진 11S 글로불린 단백질.
