Claims (10)
- -2 내지 7 범위를 포함하는 logP 값을 갖는 소수성 향미 성분 중에서 선택한 캡슐화된 향미 성분이나 조성물 및 미생물로서 효모와 적어도 하나의 탄수화물 물질로서 말토덱스트린을 포함하는 캡슐화 물질로 형성된 향 마이크로캡슐(flavouring microcapsule)을 포함하는 식용 제품(edible product)이되, 상기 식용 제품은 향 마이크로캡슐을 포함하는 식용 조성물을 70 ℃ 내지 210 ℃ 온도에서 열처리시킨 제조방법에 의해 제조됨을 특징으로 하는 식용 제품.
- 제 1 항에 있어서, 미생물은 깨지지 않은 세포벽을 가지며, 향미 성분은 확산되어 미생물 내로 축적됨을 특징으로 하는 식용 제품.
- 제 1 항 또는 제 2 항에 있어서, 탄수화물 물질은 미생물 자체의 세포벽에 존재하는 탄수화물로부터 분리된 탄수화물 물질과 합쳐짐을 특징으로 하는 식용 제품.
- 제 1 항에 있어서, 식용 조성물을 170 ℃ 내지 210 ℃ 온도에서 열처리시킴을 특징으로 하는 식용 제품.
- 제 1 항에 있어서, 0.01 내지 2.00 중량 % 의 마이크로캡슐을 포함 함을 특징으로 하는 식용 제품.
- 삭제
- 제 1 항에 있어서, 식용 제품은 튀김 제품, 반죽 기저(dough based) 제품, 또는 건식(dry)이나 말리지 않은(fresh) 파스타 형태임을 특징으로 하는 식용 제품.
- 제 1 항에서 규정한 향 마이크로캡슐을 포함하는 식용 제품의 제조방법에 있어서, 향 마이크로캡슐을 포함하는 식용 조성물을 식용 제품으로의 가공과정 동안에 70 ℃ 내지 210 ℃ 온도에서 열처리시킴을 특징으로 하는 식용 제품의 제조방법.
- 제 8 항에 있어서, 식용 조성물을 100 ℃ 내지 210 ℃ 온도에서 열처리시킴을 특징으로 하는 제조방법.
- 제 8 항에 있어서, 식용 조성물을 170 ℃ 내지 210 ℃ 온도에서 열처리시킴을 특징으로 하는 제조방법.
