Claims (6)
- 박피하여 절편한 더덕을 정제수에 침지시켜 쓴맛을 제거한 후 더덕절편을 만드는 단계와, 다시마를 열수 중에 연화시켜 다시마절편을 만드는 단계와,고추장, 식초, 검은깨, 마늘, 설탕으로 구성된 양념에 더덕절편 및 다시마절편을 섞은 후 밀폐 용기에 넣어 냉장고에 보관하는 단계를 포함하는 것을 특징으로 하는 더덕 고추장 절임의 제조방법
- 제 1항에 있어서, 더덕은 박피하여 세로로 2등분으로 절편한 후, 3∼5배수의 정제수에 30∼40분 동안 침지시켜 쓴맛을 제거한 더덕을 3.0∼5.0cm 크기로 절단하여 더덕 절편을 만드는 것을 특징으로 하는 더덕 고추장 절임의 제조방법
- 제 2항에 있어서, 더덕의 쓴맛을 제거하기 위하여 정제수에 소금을 0.1∼1.0w% 첨가하는 것을 특징으로 하는 더덕 고추장 절임의 제조방법
- 제 2항에 있어서, 다시마절편은 3∼5배수의 정제수에 넣고 90∼100℃로 가열하여 30-40분 동안 침지시켜 분리한 다시마를 가로 0.8∼1.3cm× 세로 3.0∼4.0cm크기로 절단하여 다시마 절편을 만드는 것을 특징으로 하는 더덕 고추장 절임의 제조방법
- 제 1항에 있어서, 더덕 고추장 절임은 고추장 48∼50 중량부, 식초 0.2∼0.4 중량부, 검은깨 0.8∼1.0 중량부, 마늘 0.1∼0.3 중량부, 설탕 6.0∼7.0 중량부, 다시마 절편 3.0∼4.0 중량부 및 더덕 절편 38∼40 중량부로 구성되는 것을 특징으로 하는 더덕 고추장 절임의 제조방법
- 제 1항 내지 제 5항 중 선택된 어느 한 항의 방법으로 제조한 더덕 고추장 절임
