Claims (1)
- 곡물의 볶음 단계, 추출 단계 및 여과 단계로 이루어지는 숭늉 및 숭늉 엑기스의 제조방법에 있어서, 상기 볶음 단계에서는 곡물을 볶음기에 투입하여 200 내지 380℃에서 곡물을 볶아내고 볶아진 곡물은 비중 0.85의 용액에 첨가하여 탄화도가 100%인 곡물을 선별하여 추출 단계를 실시하는 것을 특징으로 하는 곡물 탄화법에 의한 숭늉의 제조방법.
