Claims (1)
- 세척된 재첩을 물에 장시간 침수시켜 해금을 제거하는 제 1차 해금공정과, 상기 1차 해금된 재첩과 정제수를 10:1의 비율로 혼합하여 100℃에서 20~30분간 가열후, 재첩의 내용물과 껍질 및 원액을 분리하는 제 2차 해금공정으로 이루어지는 재첩국의 원액 제조방법에 있어서,상기 제 2차 해금공정에서 수득한 재첩국 원액에 대하여 키토산을 1250:1의 비율로 첨가하여 100℃로 온도에서 가열하는 키토산 첨가공정과,상기 키토산 첨가공정에서 원액에 잔존하는 해금과 각종 부유물이 키토산과 결합되어 발생되는 침전물을 원액으로부터 분리하는 제 3차 해금공정을 포함하여서 제조되는 것을 특징으로 하는 키토산이 함유된 재첩국의 원액 제조방법.
