Claims (1)
- 【特許請求の範囲】 1.食品の表面に衝突する流体の流れと、食品との間に熱を伝達する方法にお いて、 a)或る体積の流体の温度を制御する段階と、 b)前記体積の流体からオリフィスに向かい径路の配列を設定して前記オリフ ィスを経て流体が流れる際に流体流を形成する段階と、 c)温度制御した流体を前記径路の配列の各径路に沿って送出し、前記オリフ ィスから流れる流体の流れの方向が、前記オリフィスに向かう流体の流れの方向 の変化に応答して変化し、前記食品の表面と、この食品表面に衝突する流体の流 れとの間に熱を伝達する段階と、 を包含する熱を伝達する方法。 2.食品の表面に衝突する噴流を形成するオリフィスを経て流れる流体と、食 品との間の熱伝達を制御する方法において、 前記食品の表面に大体において向かって延びるオリフィス軸線を持つオリフィ スを備えた部材を、前記食品の表面に対して所定の場所に位置させる段階と、 前記オリフィスに向かう流体流れの方向を制御し、前記オリフィスから前記食 品の表面に向かって流れる流体の方向を制御する段階と、 前記オリフィスに向かう流体流れの方向を変え、前記オリフィスから前記食品 の表面に向かって流れる流体の方向を変える段階と、を包含する熱伝達を制御す る方法。 3.前記オリフィスに向かう流体流れの方向を制御する段階が、 流体を軸線を持ち又出口を持つダクトを経て送出す段階と、 このダクトの軸線を前記オリフィスに対し移動させ前記出口を前記オリフィス に対し移動させる段階とを包含する請求の範囲第2項記載の熱伝達を制御する方 法。 4.流体の流れを表面を横切って掃引させる方法において、 a)温度制御した流体を出口オリフィスを持つ室内に送出す段階と、 b)この室内の流体を前記出口オリフィスに向かう径路に沿って差向けること により、流体流れを形成する段階と、 c)前記径路の方向を前記出口オリフィスに対し変え、前記出口オリフィスか らの流体流れの方向を変える段階と、 を包含する方法。 5.前記室内の流体を前記出口オリフィスに向かう径路に沿って差し向ける段 階が、 a)前記室内の流体を縦方向軸線を持つダクト内に送出す段階と、 b)前記ダクトを動かし前記流体の流れの方向を前記出口オリフィスに向かっ て変える段階とを包含する請求の範囲第4項記載の方法。 6.前記室に複数個の出口オリフィスを配置し、前記径路の方向を変えること により温度制御した流体を複数の出口オリフィスの個別のオリフィスを経て逐次 に送出されるようにする請求の範囲第4項記載の方法。 7.食品の表面に熱を伝達する装置において、 食品支持体と、 ダクト入口、ダクト出口及び縦方向ダクト軸線を持つダクトと、 温度制御した流体を前記ダクトの前記ダクト入口内に送出し、このダクトの縦 方向に前記ダクト出口に向かい前記流体が流れるようにするプレナムと、 少なくとも1個のオリフィスを持ち、このオリフィスに前記食品支持体に大体 において向かって延びるオリフィス軸線を設け、所定の方向に流れる、噴流軸線 を持つ流体噴流を形成するようにして成る、前記食品支持体から間隔を置いた穴 あき板と、 前記縦方向ダクト軸線を前記オリフィス軸線にたいし移動させ又前記噴流軸線 の方向を前記オリフィス軸線に対し変え前記噴流軸線を前記食品支持体に対し移 動させる駆動手段と、 を包含する食品の表面に熱を伝達する装置。 8.前記流体の噴流と前記食品の表面との間の熱伝達率を、前記噴流が食品の 表面に当たる場所では強くなり、前記縦方向軸線を移動させる駆動手段により前 記噴流を前記オリフィス軸線に対して移動させ、この流体噴流の横断面積より著 しく大きい面積にわたり食品表面を実質的に一様に加熱するようにした請求の範 囲第7項記載の食品の表面に熱を伝達する装置。 9.前記ダクトが前記穴あき板に隣接して開いた側を持つ大体U字形の形状を 持つようにした請求の範囲第7項記載の食品の表面に熱を伝達する装置。 10.前記噴流板にオリフィス配列に配置した複数個のオリフィスを設け、 前記ダクトに細長い空気通路と表面を持つ横方向に延びる翼とを設け、 これ等の翼の表面が前記噴流板の前記表面に隣接して位置するように前記ドラ ムを位置決めする手段を備え、 前記駆動手段により前記縦方向ダクト軸線を移動させ前記各翼により前記オリ フィス配列の一部分への空気流を阻止し前記ダクト出口を移動させ前記オリフィ ス配列の別の部分に連通させるようにした請求の範囲第7項記載の食品の表面に 熱を伝達する装置。 11.側壁、頂壁、底壁及び後壁を持つオーブンケースと、 調理区画を形成する、側壁、頂壁、底壁及び後壁を持つオーブンキャビネット と、 前記調理区画内の上下の空気分与装置と、 前記オーブンキャビネットの後壁と、前記オーブンケースの後壁との間に連結 され空気戻しダクトを形成するそらせ板と、 このそらせ板と前記オーブンキャビネットの後壁との間に延び、少なくとも2 個の送風機吸入穴を形成した仕切壁と、 前記調理区画から空気を前記空気戻しダクトを経て吸引し、前記上下の空気分 与装置を経て前記調理区画内に空気を分与するように取付けた第1及び第2の送 風機と、 これ等の第1及び第2の送風機を制御し、これ等の各送風機により前記調理区 画内に送出される空気の体積を互いに独立して制御する独立制御手段と、 を包含する、食品を加熱する装置。 12.前記各送風機を、前記調理区画内に調理面積ft2当たり少なくとも役 80ft3/minの空気を送出すように寸法を定めた請求の範囲第11項記載 の食品を加熱する装置。 13.前記上下の空気分与装置を調理区画内に空気噴流を1500ないし25 00ft/minの範囲の速度で送出すようにした請求の範囲第11項記載の、 食品を加熱する装置。 14.皿棚と、 前記調理区画内で前記オーブンキャビネットの側壁に取付けられ、前記空気分 与装置に対し前記皿棚の位置を調節する調節できる取付け手段と を加えた請求の範囲第11項記載の、食品を加熱する装置。 15.前記上下の空気分与装置の少なくとも一方に、空気戻し通路の配列を形 成するように互いに間隔を置いた列に配置した複数個のオリフィスを持ち、前記 空気戻し通路に向かい消費空気の実質的に妨げられない流れを生じさせる噴流板 を設けた請求の範囲第11項記載の食品を加熱する装置。 16.前記の上下の空気分与装置の少なくとも一方に、 互いに間隔を置いたオリフィスを持つ噴流板と、 縦方向軸線及び流出通路を持つダクトと、 このダクトを大体において上下方向の軸線のまわりに回転し、前記噴流板に形 成した前記オリフィスの部分を経て逐次に空気を送出すと共に前記オリフィスの 別の部分を通る空気の流れは生じないようにする回転手段と、 を設けた請求の範囲第11項記載の食品を加熱する装置。 17.前記の上下の空気分与装置の少なくとも一方に、 約2inの高さを持ち、前記調理区画内に空気を送出すのに必要な空間が最小 になるようにしたダクトを設けた 請求の範囲第11項記載の、食品を加熱する装置。 18.前記の上下の空気分与装置の少なくとも一方にさらに、 前記調理室内に所定の方向に延びるオリフィス軸線を持ち前記調理室内に所定 の方向に延びる噴流軸線を持つ流体噴流を形成するようにした少なくとも1個の オリフィスを持つ板と、 前記ダクトを前記オリフィス軸線に対して移動させ、前記噴流軸線の方向を前 記調理室内に変えるようにする駆動手段と、 を設けた請求の範囲第17項記載の、食品を加熱する装置。 19.前記第1及び第2の送風機と、前記上下の空気分与装置との間に設けら れ、これ等の上下の空気分与装置を経て複数の流体流れを生成し差向ける差向け 格子を付加した 請求の範囲第11項記載の、食品を加熱する装置。 20.前記調理区画内にマイクロ波エネルギーを送出する手段を付加し、 前記差向け格子を通る通路をこれ等の通路を通るマイクロ波エネルギーの通過 を防ぐように寸法を定めた 請求の範囲第19項記載の、食品を加熱する装置。
