Claims (1)
- 【特許請求の範囲】 1.圧縮され、部分的に脱水された野菜を製造するための方法であって、15な いし60%の含水量を伴い、野菜の水分活性レベルを0.90又はそれ以下に低 下させる工程、場合に応じて、前記野菜を1種又はそれ以上の水分活性制御溶質 により処理する工程、前記野菜を圧縮に供し、野菜の間に空気空間をほとんど有 しないブロックを形成する工程を具備し、もって+8℃ないし−30℃の範囲の 温度において貯蔵される安定な野菜製品を製造する方法。 2.前記野菜の20℃における水分活性レベルが0.85又はそれ以下に、及び 含水量が15〜60%に、好ましくは約20〜40%に低下される請求の範囲第 1項の方法。 3.前記野菜が機械的手段により圧縮される請求の範囲第1項又は第2項の方法 。 4.前記野菜をフレキシブルな容器内に配置することにより前記野菜が圧縮され 、ほとんどの空気を排出させるために前記容器を真空に供し、次いで、前記容器 を密封する請求の範囲第1項又は第2項の方法。 5.前記溶質を含有する溶液中に前記野菜を浸すことにより、若しくは粉体の形 態にある前記溶質を前記野菜上にまぶすことにより脱水前、脱水中若しくは脱水 後に前記水分活性制御溶質が前記野菜に添加され、又は脱水中若しくは脱水後に 前記溶質を含有する溶液を前記野菜上に直接添加することにより前記水分活性制 御溶質が前記野菜に添加される請求の範囲第1項の方法。 6.前記水分活性制御溶質には、塩化ナトリウム、クエン酸ナトリウム又は他の 食用塩、糖及び多価アルコールが単独で又は混合物として含まれる請求の範囲第 1項の方法。 7.2%〜6%の塩化ナトリウムが前記野菜に添加される請求の範囲第6項の方 法。 8.前記水分活性制御溶質とともに、風味料、調味料及び保存料が単独で又は集 団的に含有される請求の範囲第1項の方法。 9.含水量が15〜60%であり及び水分活性が約0.90よりも低い部分的に 脱水された野菜を単独で又は混合物として含有する野菜製品であって、前記製品 が、そのなかのほとんどの空気を除去するために圧縮されてきたものであり、及 び+8℃ないし−30℃の範囲の低温において貯蔵される製品。 10.前記野菜が、水分活性レベルを20℃において0.85に、含水量を15 〜60%に、好ましくは20〜40%に低下されたものである請求の範囲第9項 の野菜製品。 11.前記野菜が機械的手段により圧縮される請求の範囲第9項の野菜製品。 12.前記野菜をフレキシブルな容器内に配置することにより前記野菜が圧縮さ れ、ほとんどの空気を排出させるために前記容器を真空に供し、次いで、前記容 器を密封されたものである請求の範囲第9項又は第10項の野菜製品。 13.前記溶質を含有する溶液中に前期野菜を浸すことにより、粉体の形態にあ る前記溶質を前記野菜上にまぶすことにより、又は前記溶質を含有する溶液を前 記野菜上に直接添加することにより前記水分活性制御溶質が前記野菜に添加され る請求の範囲第9項の野菜製品。 14.前記水分活性制御溶質には、塩化ナトリウム、クエン酸ナトリウム、乳酸 ナトリウム、又は他の食用塩、糖及び多価アルコールが単独で又は混合物として 含まれる請求の範囲第9項の野菜製品。 15.2%〜6%の塩化ナトリウムが前記野菜に添加される請求の範囲第14項 の野菜製品。 16.風味料、調味料及び保存料が単独で又は集団的に前記水分活性制御溶質と ともに含有される請求の範囲第9項の野菜製品。
