Description
本出願は、2015年6月5日出願の米国特許出願第62/171,500号;および2015年7月31日出願の米国特許出願第62/199,604号に対する米国特許法第119条(e)の下での優先権を主張するものである。
a)非共処理カルボキシメチルセルロースを含む親水コロイド成分;
b)タンパク質;
c)脂肪;
d)甘味料;
e)任意選択的に乳化剤;および
f)水
を含む加糖コンデンスクリーマーを指向する。
本発明の加糖コンデンスクリーマー(実施例1〜4)を、Avicel−Plus(登録商標)GP 3522(共処理MCC/CMCおよびアルギン酸塩ブレンド)を含む市販の調合物(比較実験A)と比較するために、表1にリストアップされる重量パーセントで成分を含む5つの調合物を産生した。
Claims (17)
- a)非共処理カルボキシメチルセルロースを含む親水コロイド成分;
b)タンパク質;
c)脂肪;
d)甘味料;
e)任意選択的に乳化剤;および
f)水
を含む加糖コンデンスクリーマーであって、
前記親水コロイドが前記クリーマーの総重量の0.01〜0.5重量パーセントを占め、
前記タンパク質が前記クリーマーの総重量の0.01〜10.0重量パーセントを占め、前記タンパク質が、乳タンパク質:乳清タンパク分離物および乳清タンパク濃縮物、カゼイン、およびそれらの混合物;大豆、小麦、米、キャノーラ、ジャガイモ、トウモロコシ、ソバ、エンドウおよびそれらの混合物を含む植物性タンパク質および植物性タンパク質源;ならびにゼラチンまたは卵タンパク質を含む動物源のタンパク質からなる群から選択される1つ以上のものを含む、
加糖コンデンスクリーマー。 - 前記親水コロイドが、セルロース、微結晶性セルロース、共処理カルボキシメチルセルロース、カラギーナン、寒天、コーンスターチ、ゼラチン、ジェラン、グアーガム、アラビアゴム、コジャック、ローカストビーンガム、メチルセルロース、ペクチン、アルギン酸塩、タピオカマルトデキストリン、トラカガンタ、キサンタンおよび加工デンプンの1つもしくは複数をさらに含む請求項1に記載のクリーマー。
- 非共処理カルボキシメチルセルロースが前記親水コロイド成分の少なくとも10重量%を占める請求項2に記載のクリーマー。
- 前記非共処理カルボキシメチルセルロースが0.4〜1.5の置換度を有する請求項1〜3のいずれか一項に記載のクリーマー。
- 前記非共処理カルボキシメチルセルロースが0.65〜1.2の置換度を有する請求項4に記載のクリーマー。
- 前記親水コロイドが、微結晶性セルロースと、非共処理カルボキシメチルセルロースとアルギン酸塩との混合物を含む請求項2に記載のクリーマー。
- 微結晶性セルロース対非共処理カルボキシメチルセルロースの重量比が1:10〜10:1であり;非共処理カルボキシメチルセルロース対アルギン酸塩の重量比が50:1〜10:1である請求項6に記載のクリーマー。
- 前記脂肪が前記クリーマーの総重量の0.01〜40.0重量パーセントを占める請求項1〜7のいずれか一項に記載のクリーマー。
- 前記脂肪が、乳脂肪、大豆油、ココナツオイル、パーム油、パーム油画分、水素化パーム核油、綿実油、キャノーラ油、オリーブオイル、ヒマワリ油、高オレイン酸ヒマワリ油、およびサフラワー油からなる群に属する1つ以上のものを含む請求項1〜8のいずれか一項に記載のクリーマー。
- 前記甘味料が前記クリーマーの総重量の10〜60重量パーセントを占める請求項1〜9のいずれか一項に記載のクリーマー。
- 前記甘味料が無糖甘味料を含む請求項1〜10のいずれか一項に記載のクリーマー。
- 前記甘味料が前記クリーマーの総重量の0.1〜40.0重量パーセントを占める請求項11に記載のクリーマー。
- 前記甘味料が、単糖類、二糖類、多糖類および無糖甘味料からなる群に属する1つ以上のものを含む請求項1〜12のいずれか一項に記載のクリーマー。
- 前記甘味料が乳化剤をさらに含む請求項1〜13のいずれか一項に記載のクリーマー。
- 前記乳化剤が前記クリーマーの総重量の0.01〜0.5重量パーセントを占める請求項13に記載のクリーマー。
- 前記乳化剤が、レシチン;ヒドロキシル化レシチン;脂肪酸のモノ、ジ、もしくはポリグリセリド;多価アルコールの脂肪エステルのポリオキシエチレンエーテル;多価アルコールの脂肪エステル;グリコールのモノ−およびジエステル;サッカロースエステル;ならびにカルボン酸のエステルの1つもしくは複数を含む請求項13に記載のクリーマー。
- 前記クリーマーが、香味料、着色剤、防腐剤、およびビタミンからなる群から選択される1つもしくは複数の成分をさらに含む請求項1〜16のいずれか一項に記載のクリーマー。
