Abstract
Una crema condensada edulcorada,que comprende: a) un hidrocoloide que comprende carboximetilcelilosa no co-procesada; b) un emulsionante; b) una proteína; c) una grasa; d) un edulcorante; e) opcionalmente un dispersante; y f) agua. El uso de carboximetilcelulosa no co-procesada como un todo o una parte del componente hidrocoloide proporciona una estabilidad al almacenamiento inesperadamente deseable, debido a que reduce de manera deseable el aumento de la viscosidad durante el almacenamiento, con relación al observado en formulaciones convencionales de cremas condensadas edulcoradas que comprenden sólo carboximetilcelulosa co-procesada.
