コーヒーホワイトナーを、キレート化剤(0%、対照として)を加えない、またキレート化剤、クエン酸ナトリウムをそれぞれ0.01、0.02、0.03、0.05及び0.1wt%の量で加えた以外は、実施例1と同様に調製した。キレート化剤を含まない又は0.01〜0.1wt%の範囲の様々な量のキレート化剤(0.01、0.02、0.03、0.05及び0.1wt%のキレート化剤を含むコーヒーホワイトナーにそれぞれ対応する0.05、0.10、0.15、0.25及び0.50gのキレート化剤)を含むコーヒーホワイトナー30gを熱いコーヒー180mlに加えた(図3を参照されたい)。結果は以下の通りである。
Claims (15)
- 乳化成分、
セルロース成分を含む親水コロイド系、
有機酸若しくは無機酸、又はこれらの塩の少なくとも1種のキレート化剤を含むキレート系、
少なくとも1種のバッファー剤を含むバッファー系、並びに
クリーマーを加える水性媒体をさらに白色化するのに十分な量の白色剤
を含む、低タンパク質又は無タンパク質の液体クリーマー組成物であって、
組成物の植物油含有量は、組成物の0.1重量%〜33重量%であり、タンパク質含有量は組成物の3重量%以下であり、少なくとも1種のキレート剤は組成物の0.02〜1.4wt%の量で存在し、
乳化成分が、低HLB乳化剤及び中HLB乳化剤の組合せを含み、低HLB乳化剤が、モノグリセリド、ジグリセリド、アセチル化モノグリセリド、ソルビタントリオレエート、グリセロールジオレエート、ソルビタントリステアレート、プロピレングリコールモノステアレート、グリセロールモノオレエート及びモノステアレート、並びにこれらの組合せからなる群から選択され、中HLB乳化剤が、ソルビタンモノオレエート、プロピレングリコールモノラウレート、ソルビタンモノステアレート、ステアロキシル−2−乳酸カルシウム、グリセロールソルビタンモノパルミテート、大豆レシチン、モノグリセリドのジアセチル化酒石酸エステル、及びこれらの組合せからなる群から選択され、
親水コロイド系が、微晶質セルロース(MCC)、カルボキシメチルセルロース(CMC)、カラギーナン、又はこれらの組合せを含み、
少なくとも1種のキレート化剤が、クエン酸、アミノ酸、アミノ酸のナトリウム塩若しくはカリウム塩、ヘキサメタリン酸ナトリウム若しくはカリウム、トリ、テトラ及びその他のポリリン酸ナトリウム若しくはカリウム、クエン酸ナトリウム若しくはカリウム、EDTA、EDTAのナトリウム塩若しくはカリウム塩、酒石酸ナトリウム若しくはカリウム、又はこれらの組合せであり、
少なくとも1種のバッファー剤は、リン酸カリウム、リン酸二カリウム、リン酸三カリウム、リン酸ナトリウム、リン酸二ナトリウム、リン酸三ナトリウム、ピロリン酸四ナトリウム、ピロリン酸四カリウム、ヘキサメタリン酸ナトリウム、炭酸カリウム、炭酸ナトリウム、重炭酸カリウム、重炭酸ナトリウム、酢酸ナトリウム若しくはカリウム、アスコルビン酸ナトリウム若しくはカリウム、及びこれらの組合せからなる群から選択される、有機酸若しくは無機酸の食品グレードの塩であるか、又はこれらと有機酸若しくは無機酸との組み合わせであり、
白色剤が、二酸化チタン(TiO 2 )であり、
組成物は、冷蔵温度で少なくとも6カ月安定な、保存期限が延長された液体クリーマーの形態であり、
組成物は、少なくとも9カ月間保存安定性がある、無菌の液体クリーマーの形態である、組成物。 - クリーマー組成物は、様々なpH、硬度及び温度の飲料の水性媒体に加えたときに、高い白色化能及び認識できるフェザリング若しくは脂肪分離の無い心地よい口当たりをもたらす、請求項1に記載の組成物。
- 少なくとも1種のキレート化剤が、0.05〜1wt%の量で存在する、請求項1又は2に記載の組成物。
- 少なくとも1種のキレート化剤が、0.05〜0.5wt%の量で存在する、請求項1〜3のいずれか一項に記載の組成物。
- 少なくとも1種のキレート化剤が、クエン酸、ヘキサメタリン酸ナトリウム若しくはカリウム、トリ、テトラ及びその他のポリリン酸ナトリウム若しくはカリウム、クエン酸ナトリウム若しくはカリウム、EDTA、EDTAのナトリウム塩若しくはカリウム塩、又はこれらの組合せである、請求項1〜4のいずれか一項に記載の組成物。
- 親水コロイド系と少なくとも1種のキレート化剤との間のwt/wt比が、(0.035〜100):1である、請求項1〜5のいずれか一項に記載の組成物。
- 親水コロイド系と少なくとも1種のキレート化剤との間のwt/wt比が、(1〜50):1であり、白色剤が、粒径が0.1〜0.7ミクロンの二酸化チタン(TiO2)であり、組成物の0.1〜1重量%の量で存在する、請求項1〜6のいずれか一項に記載の組成物。
- 親水コロイド系と少なくとも1種のキレート化剤との間のwt/wt比が、(1〜10):1である、請求項1〜7のいずれか一項に記載の組成物。
- 少なくとも1種のバッファー剤が、組成物の0.05%〜2.1重量%の量で存在する、請求項1〜8のいずれか一項に記載の組成物。
- 少なくとも1種のバッファー剤が、組成物の0.1〜0.8重量%の量で存在する、請求項9に記載の組成物。
- 水性液体、飲料形成成分、及び飲料にクリーム効果をもたらすのに十分な量の請求項1〜10のいずれか一項に記載のクリーマー組成物を含む、飲料。
- 飲料形成成分が、コーヒー、紅茶、チョコレート又は果実飲料である、請求項11に記載の飲料。
- 食品と共に摂取するため又は調理に使用するための、請求項1〜10のいずれか一項に記載の組成物を含む乳製品代用品。
- 粉末形態若しくは液体形態、又はこれらの組合せで、乳化成分、親水コロイド系、キレート化剤、バッファー剤、白色剤、及び任意選択で甘味料を用意するステップ、並びにこれらの成分を撹拌しながら水に溶解するステップを含む、請求項1〜10のいずれか一項に記載のクリーマー組成物を製造する方法。
- 植物油を水に加えてすべての成分の混合物を作製し、続いて、混合物を、ESL又はUHT熱処理に供し、均質化し、冷却し、無菌条件下で容器に充填するステップをさらに含む、請求項14に記載の方法。
