Abstract
Description
(i)天然甘味料、例えば、羅漢果(モグロサイドIV又はV)、ステビア(レバウディオシドA、B、C、D、E、F、...、M)、タウマチン、ブラゼイン、グリチルリチン酸及びその塩、クルクリン、モネリン、フィロデシン、ルブソシド、マビンリン、ズルコシドA、ズルコシドB、ステビオシド、シアメノシド、モナチン及びその塩(モナティンSS、RR、RS、SR)、ヘルナンドゥルシン、フィロズルチン、グリシフィリン、フロリジン、トリロバチン、バイユノシド、オスラジン、ポリポドシドA、プテロカリオシドA、プテロカリオシドB、ムクロジオシド、フロミソシドI、ペリアンドリンI、アブラソシドA、シクロカリオシドI、エリスリトール、及び/又は他の天然ポリオール、例えばマルチトール、マンニトール、ラクチトール、ソルビトール、イノシトール、イソマルト、キシリトール、グリセロール、プロピレングリコール、トレイトール、ガラクチトール、還元イソマルトオリゴ糖、パラチノース、還元キシロオリゴ糖、還元ゲンチオオリゴ糖、還元マルトースシロップ、又は還元グルコースシロップ、又はそれらの混合物、並びに/又は
(ii)人工甘味料、例えば、アスパルテーム、シクラメート、スクラロース、アセスルファムK、ネオテーム、アリテーム、サッカリン、ネオヘスペリジンジヒドロカルコン、又はそれらの混合物、
において選択される、少なくとも1つの第2の甘味剤が挙げられるが、それらに限定されない。
10gのカゼイン酸ナトリウムと250gのスクロースとの乾燥配合物を、高撹拌下で、上記安定剤を含む高温水のタンクに加えた。混合10分後、乳化剤(モノグリセリド及びジグリセリド10g、モノグリセリド及びジグリセリドのジアセチル化酒石酸エステル30g)を、連続撹拌下でタンクに加えた。更に、油溶性酸化防止剤(1000mg/kg)を含有する超高オレイン酸ヒマワリ油800gを撹拌下で添加した。次いで、少量の残りの水を添加して、合計製品量を10kgに調整した。
実施例1と同様にして液体であるクリーマーを調製したが、ヒマワリ油の代わりに高オレイン酸藻類油を使用した。
完全硬化パーム核油5.2kgを容器内で最大55℃に加熱した。乳化剤(モノグリセリド及びジグリセリドのジアセチル化酒石酸エステル23g、並びに蒸留モノグリセリド92g)をタンクに加え、10分間混合して油中に溶解させた。
高オレイン酸藻類油の代わりに高オレイン酸大豆油を用いた以外は、実施例3と同様にして粉末であるクリーマーを調製した。
Claims (15)
- クリーマー組成物であって、
前記クリーマー組成物中の総脂肪酸の85〜97重量%のオレイン酸含有量を有する超高オレイン酸油と、油溶性酸化防止剤と、を含む、クリーマー組成物。 - 前記超高オレイン酸油が、前記総脂肪酸の2〜5%の濃度でリノール酸と、前記総脂肪酸の1%を超えない濃度でアルファ−リノレン酸と、を含む、請求項1に記載のクリーマー組成物。
- 前記油溶性酸化防止剤が、トコフェロールを含む、請求項1に記載のクリーマー組成物。
- 前記トコフェロールが、少なくとも50mg/kgである、請求項3に記載のクリーマー組成物。
- 前記超高オレイン酸油が、高オレイン酸ヒマワリ油、高オレイン酸藻類油、又はそれらの組み合わせを含む、請求項1に記載のクリーマー組成物。
- 前記油溶性酸化防止剤が、大豆油、菜種油及び/又はそれらの組み合わせから抽出されるトコフェロールを含む、請求項3に記載のクリーマー組成物。
- 前記クリーマー組成物中の油の量が、前記クリーマー組成物の2〜55重量%である、請求項1に記載のクリーマー組成物。
- 前記クリーマー組成物の0.1重量%〜5重量%の濃度でタンパク質を更に含む、請求項1に記載のクリーマー組成物。
- 前記クリーマー組成物の約0.2〜約2重量%の範囲で乳化剤を含む、請求項1〜8のいずれか一項に記載のクリーマー組成物。
- 請求項1〜9のいずれか一項に記載のクリーマー組成物を含む飲料組成物。
- コーヒー、茶、麦芽、穀物、又はココア飲料組成物、ナッツ系ミルク若しくはココナッツ系ミルクである、請求項10に記載の飲料組成物。
- 請求項1に記載のクリーマー組成物を製造する方法であって、
前記クリーマーが液体であり、
前記方法が、
超高オレイン酸油、タンパク質、低分子量乳化剤、緩衝剤を混合するステップと、
前記混合物を超高温(UHT)処理に供するステップと、
前記混合物を均質化するステップと、
前記混合物をパッケージに無菌充填するステップと、
を含む、方法。 - 飲料組成物を調製する方法であって、前記方法が、
a)飲料組成物ベースを用意するステップと、
b)液体である請求項1〜9のいずれか一項に記載のクリーマー組成物を前記飲料組成物ベースに添加するステップと、
を含む、方法。 - 請求項1に記載のクリーマー組成物を製造する方法であって、
前記クリーマーが粉末であり、
前記方法が、
超高オレイン酸油、タンパク質、低分子量乳化剤、緩衝剤を混合するステップと、
前記混合物を低温殺菌するステップと、
前記混合物を均質化するステップと、
噴霧乾燥するステップと、
前記粉末をパッケージに充填するステップと、
を含む、方法。 - 飲料組成物を調製する方法であって、前記方法が、
a)飲料組成物ベースを用意するステップと、
b)粉末である請求項1〜9のいずれか一項に記載のクリーマー組成物を前記飲料組成物ベースに添加するステップと、
を含む、方法。
