Abstract
Description
(1)糖質が0.5重量%以下であり、総油分が5〜50重量%かつ乳脂含量が0.5重量%以上であることを特徴とするコーヒーホワイトナー、
(2)中鎖脂肪酸トリグリセリド(MCT)を0.5重量%以上含有する(1)記載のコーヒーホワイトナー、
(3)高甘味度甘味料含量が0.05重量%以下である(1)または(2)記載のコーヒーホワイトナー、
(4)(1)から(3)のいずれか1つに記載のコーヒーホワイトナーを配合し、加熱殺菌して調製された飲料、
に関するものである。
まず、コーヒーホワイトナーの乳化安定性の評価は、以下の方法で行った。
得られたコーヒーホワイトナーを十分冷やした(3〜7℃)後、100mlビーカーに50ml分注し攪拌子と共に、室温にてシェイカーにより衝撃を与え続け、10分以上、増粘、固化あるいは、油脂の分離(オイルオフ)せず乳化状態を保ったものを可とした。一方、この条件で増粘、固化あるいは、油脂の分離(オイルオフ)等で乳化状態を保てなかったものは不可とした。

実験1 乳脂含量による影響
なお、日本食標準成分表2015年版(七訂)によるとバター及び牛乳中の乳固形分含量(たんぱく質+脂質+炭水化物+灰分の総和)は、それぞれ84.2重量%、12.6重量%のため、実施例16〜20及び比較例2の飲料における乳固形分含量が略同量(1.39重量%)となるように調整にした。この際、実施例14〜15のコーヒーホワイトナーの乳固形分含量は、22.74重量%、実施例6〜8のコーヒーホワイトナーの乳固形分含量は、25.9重量%として計算を行った。
以上の結果から明らかなように、無脂乳固形分を含有しない乳脂をコーヒーホワイトナーに使用することにより、コーヒーや紅茶等の飲料に添加した際、殺菌臭及び加熱臭が少なく、良好な乳風味の付与効果が見られた。特に、油相として乳脂と中鎖脂肪酸トリグリセリド(MCT)を併用した実施例では、顕著な乳風味の付与効果が見られた。さらに、本発明のコーヒーホワイトナーを添加したコーヒーや紅茶等の飲料では、加熱殺菌による風味劣化を抑制する効果が見られた。
Claims (4)
- 糖質が0.5重量%以下であり、総油分が5〜50重量%かつ乳脂含量が0.5重量%以上であることを特徴とするコーヒーホワイトナー。
- 中鎖脂肪酸トリグリセリド(MCT)を0.5重量%以上含有する請求項1記載のコーヒーホワイトナー。
- 高甘味度甘味料含量が0.05重量%以下である請求項1または2記載のコーヒーホワイトナー。
- 請求項1から請求項3のいずれか1項記載のコーヒーホワイトナーを配合し、加熱殺菌して調製された飲料。
