Description
Claims (1)
- 【特許請求の範囲】 1. 顆粒化したクリーマー粒子の形状の粉末クリーマーであって、該クリーマ ー粒子がそれぞれ甘味料、水分散性又は水溶性タンパク質及び淡泊なフレーバー と10℃未満の溶融点とを有する食用油を含有する、前記粉末クリーマー。 2. 前記食用油が約5℃より低い溶融点を有する、請求項1に記載の粉末クリ ーマー。 3. 前記食用油が植物油であり、その植物油のトリグリセリド中の脂肪酸部分 が少なくとも70重量%のオレイン酸及び20重量%未満のリノール酸を含有す る、請求項1に記載の粉末クリーマー。 4. 前記食用油が約0℃から約2℃の溶融点を有するサンフラワー油又はキャ ノーラ油であり、当該食用油中の脂肪酸部分が少なくとも85重量%のオレイン 酸を含有する、請求項1に記載の粉末クリーマー。 5. 前記食用油が約25重量%から約45重量%を占める、請求項1に記載の 粉末クリーマー。 6. 前記甘味料が約40重量%から約70重量%を占める、請求項1に記載の 粉末クリーマー。 7. 前記タンパク質が0.5重量%から6重量%を占める、請求項1に記載の 粉末クリーマー。 8. スクシニル化されたモノグリセリド又は蒸留されたモノグリセリドとモノ ジグリセリドのジアセチル酒石酸エステルとの混合物から選択される乳化剤をさ らに含有する、請求項1に記載の粉末クリーマー。 9. 溶解時における発泡用ガスを内蔵する、請求項1に記載の粉末クリーマー 。 10. 甘味料、水分散性又は水溶性タンパク質及び淡泊なフレーバーと10℃ 未満の溶融点とを有する食用油の溶液を生成する工程、 該溶液を乾燥してクリーマー粒子を生成する工程、及び 該クリーマー粒子を顆粒化させて粉末クリーマーを得る工程、 を含む、粉末クリーマーの製造方法。
