Description
(1)タマネギ乾燥粉末を配合することを特徴とする、クルトンの食感改善方法。
(2)クルトンの食感改善が、クルトンの硬さ向上、カリカリ感向上、ふやけ抑制から選ばれる少なくとも1以上である、(1)に記載の方法。
(3)タマネギ乾燥粉末の配合量が0.1〜5重量%である、(1)又は(2)に記載の方法。
(4)10〜20mm角の立方体様形状のクルトンの食感を改善することを特徴とする、(1)〜(3)のいずれか1つに記載の方法。
(5)タマネギ乾燥粉末を0.1〜5重量%配合して製造することを特徴とする、食感が改善されたクルトンの製造方法。
(6)前記クルトンが10〜20mm角の立方体様形状である、(5)に記載の方法。
装置:Stable Micro Systems社製 TA.XT Plus Texture Analyser
プローブ:直径2mm ステンレス製シリンダー型プローブ
スピード:2mm/sec
トリガー荷重:25g
貫入条件:10mm
荷重×秒の積算面積を数値として採用する。(単位:kg・sec)
サンプル2−2:タマネギ乾燥粉末を0.3部配合
サンプル2−3:タマネギ乾燥粉末を0.5部配合
サンプル2−4:タマネギ乾燥粉末を1部配合
サンプル2−5:タマネギ乾燥粉末を3部配合(サンプル1−1と同じ)
サンプル2−6:タマネギ乾燥粉末を5部配合
Claims (5)
- タマネギ乾燥粉末を0.3〜3重量%配合することを特徴とする、クルトンの食感改善方法。
- クルトンの食感改善が、クルトンの硬さ向上、カリカリ感向上、ふやけ抑制から選ばれる少なくとも1以上である、請求項1に記載の方法。
- 10〜20mm角の立方体様形状のクルトンの食感を改善することを特徴とする、請求項1又は2に記載の方法。
- 第1次発酵前にタマネギ乾燥粉末を0.3〜3重量%配合して製造することを特徴とする、食感が改善されたクルトンの製造方法。
- 前記クルトンが10〜20mm角の立方体様形状である、請求項4に記載の方法。
