Description
発明者は、従来から、電圧印加解凍の機能を活用することで、冷凍食品の高品質な解凍及び保存の技術開発に取り組んでいる。
図1は、本発明の実施形態の冷凍品の解凍方法に用いる解凍機の一例を示した図である。図2は、図1の解凍機を上下方向から見た図である。
以下、解凍機100の動作(冷凍食品21の解凍方法)について説明する。
冷凍食品21への電圧印加の有無以外、他の条件を同一にして、冷凍状態の牛ロースブロックを解凍する実験を行った。具体的には、牛ロースブロックを1/2に切り分け、両者とも同じ温度環境の−3℃で解凍及び保存(16時間)を行い、その後、意図的に菌が増殖し易い温度(30℃)環境にて12時間保存し、菌数の確認検査を行った。本実験の結果は、下記表1の通りである。
冷凍食品21への電圧印加の有無以外、他の条件を同一にして、冷凍状態の豚ロースブロックを解凍する実験を行った。具体的には、豚ロースブロックを1/2に切り分け、両者とも同じ温度環境の0℃で解凍(16時間)を行い、その後、−3℃で保存を行った。
冷凍食品21の電圧印加の有無以外、他の条件を同一にして、冷凍状態のカジキマグロを解凍する実験を行った。具体的には、カジキマグロを1/2に切り分け、両者とも同じ温度環境において、−3℃で解凍及び保存(24時間)を行い、その後、意図的に菌が増殖し易い温度(30℃)環境にて6時間保存し、菌数の確認検査を行った。本実験の結果は、下記表3の通りである。

Claims (3)
- 1μA以上、1000mA以下の電流が冷凍品に流れるように、10V以上、5kV以下の交流電圧を前記冷凍品に印加することで、容器内の前記冷凍品を解凍する方法であって、
前記冷凍品への前記交流電圧の印加を行いながら、前記容器内の温度を、前記冷凍品が0℃〜マイナス10℃の間のマイナス温度で解凍される半解凍状態になるように制御して、前記冷凍品を解凍する半解凍工程と、
前記冷凍品への前記交流電圧の印加を停止し、前記半解凍状態を維持して前記冷凍品を保存する保存工程と、を備える冷凍品の解凍方法。 - 前記半解凍工程と前記保存工程の間に、前記冷凍品への前記交流電圧の印加を行いながら、前記半解凍状態を維持して前記冷凍品を前記容器内で保存する工程を更に備える、請求項1に記載の冷凍品の解凍方法。
- 前記半解凍工程の後で、前記冷凍品を前記容器外で常温解凍する工程を更に備える、請求項1又は2に記載の冷凍品の解凍方法。
