この実施例は、65mmの内部直径を有する250cm3のビーカーにおいて200cm3の熱い(85℃)水で液戻ししたインスタントの凍結乾燥可溶性コーヒーにおける本発明の利益を証明する。

以下の実施例は、インスタント可溶性コーヒー粉末および発泡成分の粒子の蒸気凝集による、顆粒状発泡性インスタントコーヒー組成物の製造を例示する。
凍結乾燥コーヒー顆粒を等量の熱水で液戻しして、固形分濃度約50%を有するコーヒー抽出物を製造した。このコーヒー抽出物を約5℃までチルドし、窒素ガスの添加を介して泡立てて、810g/lの泡立てられた抽出物濃度の抽出物を得た。次いで、該コーヒー抽出物を約−5℃までさらに冷却した。
この実施例は、65mmの内部直径を有する250cm3のビーカーにおいて200cm3の熱い(85℃)水で液戻ししたインスタントの凍結乾燥可溶性コーヒーに関する。
Claims (9)
- 0.16から0.45g/cm3の嵩密度を有する粒子を含む発泡性インスタントコーヒー組成物であって、
前記粒子は、
インスタントコーヒーマトリックスを含む連続相、および、
ガスを含有する発泡成分の粒子(但し、インスタントコーヒー粒子を除く)を含む非連続相、
を含み、
前記非連続相は、前記インスタントコーヒーマトリックス中に閉じ込められている、
ことを特徴とする組成物。 - 前記粒子は、発泡成分の粒子を含む非連続相をその中に閉じ込めた凍結乾燥インスタントコーヒーマトリックスを含む連続相を有することを特徴とする請求項1に記載の組成物。
- 前記粒子は、凝集インスタントコーヒー粒子を含む連続相および発泡成分の粒子を含む非連続相を有することを特徴とする請求項1に記載の組成物。
- 前記粒子は、少なくとも0.10cm3/gの密閉気孔体積を有することを特徴とする前記請求項1〜3のいずれか一項に記載の組成物。
- 前記発泡成分は、噴霧乾燥した炭水化物ベースの粉末を含むことを特徴とする前記請求項1〜4のいずれか一項に記載の組成物。
- 前記インスタントコーヒーマトリックスは、糖および/またはホワイトナーも含むことを特徴とする前記請求項1〜5のいずれか一項に記載の組成物。
- 前記組成物の合計質量に対して10から50重量%の前記発泡成分を含むことを特徴とする前記請求項1〜6のいずれか一項に記載の組成物。
- 前記発泡成分は、過圧下で閉じ込められたガスを含有する複数の内部空隙を有する微粒子成分を含むか、または濃縮液体もしくは超臨界流体を含有する複数の内部空隙を有する微粒子成分を含むことを特徴とする前記請求項1〜7のいずれか一項に記載の組成物。
- 前記発泡成分はガス含有クラスレートであることを特徴とする前記請求項1〜8のいずれか一項に記載の組成物。
