Description
すなわち本発明は、以下の(1)〜(5)に関する。
(1)シトルリンおよびクエン酸と、クエン酸ナトリウムまたはリン酸水素二ナトリウムとを含有する飲料。
(2)シトルリンの濃度が0.01〜2重量%である上記(1)の飲料。
(3)クエン酸とクエン酸ナトリウムの重量配合比が5:1〜1:6、かつクエン酸とクエン酸ナトリウムの濃度が合わせて0.01〜3重量%である上記(1)または(2)の飲料。
(4)クエン酸とリン酸水素二ナトリウムの重量配合比が3:1〜1:5、かつクエン酸とリン酸水素二ナトリウムの濃度が合わせて0.01〜4重量%である上記(1)または(2)の飲料。
(5)pHが2〜7である上記(1)〜(4)のいずれかの飲料。
シトルリンは、化学的に合成する方法、発酵生産する方法等により取得することができる。また、シトルリンは、市販品を購入することにより取得することもできる。
シトルリンを化学的に合成する方法としては、例えば、J. Biol. Chem. 122, 477 (1938)、J. Org. Chem. 6, 410 (1941)に記載の方法があげられる。
また、L-シトルリンおよびD-シトルリンは、シグマ−アルドリッチ社等より購入することもできる。
本発明では、シトルリンの代りにシトルリンの塩を用いてもよい。
酸付加塩としては、塩酸塩、硫酸塩、硝酸塩、リン酸塩等の無機酸塩、酢酸塩、マレイン酸塩、フマル酸塩、クエン酸塩、リンゴ酸塩、乳酸塩、α−ケトグルタル酸塩、グルコン酸塩、カプリル酸塩、アジピン酸塩、コハク酸塩、酒石酸塩、アスコルビン酸塩等の有機酸塩があげられる。
アンモニウム塩としては、アンモニウム、テトラメチルアンモニウム等の塩があげられる。
有機アミン付加塩としては、モルホリン、ピペリジン等の塩があげられる。
上記のシトルリンの塩のうち、クエン酸塩、リンゴ酸塩が好ましく用いられるが、他の塩、または2以上の塩を適宜組み合わせて用いてもよい。
本発明の飲料は、シトルリンおよびクエン酸と、クエン酸ナトリウムまたはリン酸水素二ナトリウムを含有させる以外は、一般的な飲料の製造方法により製造することができる。
糖類としては、飲料の製造に用いられるものであれば特に制限されることもなく、単糖類、二糖類、オリゴ糖類、多糖類、糖アルコール、甘味料のいずれでも良い。該糖類としては、例えばブドウ糖、果糖、ショ糖、麦芽糖、トレハロース、キシリトール、エリスリトール、還元水飴、デキストリン、でんぷん、ソルビトール、マルチトール、スクラロース、アスパルテーム、アセスルファムK、ステビア、サッカリンナトリウム、グリチルリチン二カリウム、ソーマチンがあげられるが、ブドウ糖、果糖、ショ糖が好ましい。
抗酸化剤としては、飲料に使用できるものであれば特に制限されないが、例えばトコフェロール、アスコルビン酸、塩酸システイン、L-アスコルビン酸ステアリン酸エステルがあげられる。
香料としては、飲料に使用できるものであれば特に制限されないが、例えばレモンフレーバー、レモンライムフレーバー、グレープフルーツフレーバー、アップルフレーバーがあげられる。
有機酸および無機酸としては、飲料の製造に用いられるものであれば特に制限されない。また、有機酸および無機酸の代りにそれらの塩を用いてもよい。有機酸および無機酸の塩としては飲料の製造に用いられるものであれば特に制限されない。
本発明の飲料にクエン酸ナトリウムを使用する場合、飲料に含まれるクエン酸およびクエン酸ナトリウムの重量配合比としては、通常は5:1〜1:6、好ましくは4:1〜1:5、より好ましくは3:1〜1:4である。クエン酸およびクエン酸ナトリウムの濃度としては、両者の濃度を合わせて通常は0.01〜3重量%、好ましくは0.05〜2重量%、より好ましくは0.1〜1重量%である。上記の場合、飲料中のクエン酸イオン濃度としては、通常は0.0078〜2.9重量%、好ましくは0.039〜1.9重量%、より好ましくは0.078〜0.95重量%である。
飲料中のシトルリン、クエン酸、クエン酸ナトリウムまたはリン酸水素二ナトリウムを上記の濃度とすることにより、保存や加熱による悪臭の発生を抑えた飲みやすい飲料を提供することができる。
試験例1(クエン酸およびクエン酸ナトリウムによる悪臭抑制効果)
実施例1、2および比較例1の飲料をそれぞれ蓋付きの瓶に入れ、120℃、20分加熱した後、被験者6名による官能試験を実施した。評価の基準は、比較例1で生じた悪臭と比較して、1;消臭効果あり、2;消臭効果ややあり、3;あまり消臭効果はない、4;消臭効果はない、で判定した。結果を表1に示す。

表1より、クエン酸およびクエン酸ナトリウムを含有する実施例1、2の飲料では、明確な消臭効果が得られることが明らかとなった。

実施例3、4および比較例1の飲料をそれぞれ蓋付きの瓶に入れ、120℃、20分加熱した後、被験者5名による官能試験を実施した。評価の基準は、比較例1で生じた悪臭と比較して、1;消臭効果あり、2;消臭効果ややあり、3;あまり消臭効果はない、4;消臭効果はない、で判定した。結果を表2に示す。

表2より、クエン酸およびリン酸水素二ナトリウムを含有する実施例3、4の飲料では、明確な消臭効果が得られることが明らかとなった。

超純水にL−シトルリンを1重量%含有する飲料を作製した。
Claims (2)
- シトルリンおよびクエン酸と、クエン酸ナトリウムまたはリン酸水素二ナトリウムとを含有する飲料であって、該シトルリンが化学的に合成する方法または発酵生産する方法によって製造されたシトルリンであり、
i)該クエン酸と該クエン酸ナトリウムの濃度が合わせて0.1〜3重量%であって、かつ該クエン酸および該クエン酸ナトリウムを重量配合比で5:1〜1:6で含むか、または、
ii)該クエン酸と該リン酸水素二ナトリウムの濃度が合わせて0.1〜4重量%であって、かつ該クエン酸および該リン酸水素二ナトリウムを重量配合比で3:1〜1:5で含み、
該シトルリンの濃度が0.01〜2重量%、
である、120℃で20分間加熱した場合には、該シトルリンのみを含む飲料を120℃で20分間加熱した後よりも悪臭の発生が抑制される、加熱処理された飲料。 - pHが2〜7である請求項1記載の飲料。
