Abstract
本發明提供一種飲料,含有吡咯喹啉醌及/或其鹽、與胺基酸及/或其鹽、與抗壞血酸及/或其鹽之飲料,其抗壞血酸及/或其鹽的含量為吡咯喹啉醌及/或其鹽的含量之2質量倍以上。

本發明為,有關搭配吡咯喹啉醌與胺基酸及/或其鹽與抗壞血酸及/或其鹽之飲料及其製造方法。
非酒精飲料(亦稱為軟性飲料),除作為方便補充水分的方法而被普及,藉由充滿戲劇般的風味和功能,並具有多樣的嗜好和需求而取悅消費者。
作為受到日益增長的健康導向而搭配胺基酸之飲料的運動飲料、能量飲料的需求日益增長。特別是,被稱為BCAA(Branched Chain Amino Acids:分支鏈胺基酸)具有分支且膨鬆取代基之胺基酸,在消除疲勞具有效果而搭配在眾多運動飲料。又,作為改善味道而對綠茶和紅茶飲料搭配胺基酸被頻繁的在進行。例如,將具有茶胺酸為代表之味道的胺基酸搭配於茶系飲料,以進行提高嗜好性。
已知吡咯喹啉醌具有腦功能改善、血糖值改善、抗氧化、延長壽命效果等之功能性。又,吡咯喹啉醌亦有粒線體活性化功能,被期待搭配於運動飲料。

[發明所欲解決之課題]
有報告指出,以將吡咯喹啉醌,與胺基酸、特別是甘胺酸、L-絲胺酸或L-色胺酸組合,而增加神經成長因子的效果(專利文獻1)。因為這樣的理由,期待有搭配胺基酸與吡咯喹啉醌的組合的飲料。
至目前為止有關於含有吡咯喹啉醌的飲料報告有紅茶風飲料(專利文獻2)和酒精飲料(專利文獻3)。
因為吡咯喹啉醌具有醌結構,容易與胺基反應。有報告指出,使吡咯喹啉醌與胺基酸以粉末狀態混合的情況,2者可以安定存在,但吡咯喹啉醌與胺基酸於溶液狀態中會發生反應(非專利文獻1,專利文獻4)。因此,於飲料搭配胺基酸則吡咯喹啉醌含有量將顯著降低,而有生成與胺基酸之反應生成物之咪唑吡咯喹啉(IPQ)的問題。然而,以往不知道吡咯喹啉醌與胺基酸會發生反應,何況,更不知道有關防止該反應之方法。
又,本發明者發現搭配BCAA與吡咯喹啉醌之飲料中促使產生來自BCAA之臭氣的現象,但尚未知道其解決方法。
本發明,以降低含有胺基酸與吡咯喹啉醌的飲料中因胺基酸而使吡咯喹啉醌減少等為課題。
[解決課題的方法]
本發明者,為解決上述問題進行銳意檢討的結果,令人驚訝的,發現使在含有胺基酸與吡咯喹啉醌的飲料中,以含有抗壞血酸(維他命C),而抑制吡咯喹啉醌含有量的低減。又,發現使抗壞血酸與吡咯喹啉醌預混後,以搭配胺基酸而可更有效果的抑制吡咯喹啉醌的減少。更進一步,發現抗壞血酸亦具有抑制BCAA的臭氣的效果。
本發明包含以下的態樣的發明,但不限定於這般者。

藉由搭配抗壞血酸及/或其鹽,提供雖然含有胺基酸及/或其鹽仍然維持吡咯喹啉醌之含量的飲料成為可能。
更進一步,根據本發明,飲料所含有之胺基酸如為分枝鎖胺基酸的情況,其固有的臭氣亦藉由抗壞血酸及/或其鹽而被抑制。
[實施發明之最佳形態]
(飲料)
本發明的飲料,以於吡咯喹啉醌及/或其鹽(以下、亦簡稱「吡咯喹啉醌」)與胺基酸及/或其鹽(以下、亦簡稱「胺基酸」)的組合,搭配抗壞血酸及/或其鹽(以下、亦簡稱「抗壞血酸」)為特徵。
本發明的飲料之原料所使用之吡咯喹啉醌,為式1所表示的結構之物質。此物質可作為吡咯喹啉醌的游離鹼存在,亦可作為鹽存在。吡咯喹啉醌及/或其鹽,可使用市販者,亦可藉由公知的方法製造。作為本發明中所使用之吡咯喹啉醌的鹽可舉例如吡咯喹啉醌的鹼金屬鹽、鹼土類金屬鹽、銨鹽,但以鹼金屬鹽為佳。

作為本發明中所使用之吡咯喹啉醌的鹼金屬鹽,可舉例如鈉、鉀、鋰、銫、銣等的鹽。以較佳、容易取得的觀點,作為鹼金屬鹽以鈉鹽及鉀鹽為更佳。
吡咯喹啉醌的鹼金屬鹽,可以1~3個的鹼金屬所置換之鹼金屬鹽、單鹼金屬鹽、二鹼金屬鹽、三鹼金屬鹽之任一者亦為佳。較佳為二鹼金屬鹽。特別佳為二鈉鹽及二鉀鹽。
抗壞血酸可為抗壞血酸鈉、抗壞血酸鈣等的鹽之形態。作為抗壞血酸鹽,在溶液中不容易析出吡咯喹啉醌的抗壞血酸鈉為佳。
吡咯喹啉醌及/或其鹽,藉由混合抗壞血酸,飲料中的一部分或全部可形成還元型吡咯喹啉醌及/或其鹽。還元型吡咯喹啉醌為以下之式2所示之結構。

因氧化型的吡咯喹啉醌及/或其鹽與此還元型吡咯喹啉醌及/或其鹽為容易氧化還元可視為等價,故提及有關飲料中的濃度的情況,將兩者不予區別而記載。還元型吡咯喹啉醌藉由空氣中的氧而容易氧化。
飲料中吡咯喹啉醌和胺基酸之含量,可因應所期望之效果而由該業者適宜決定。一實施態樣中,本發明中的吡咯喹啉醌及/或其鹽之含量為10~400mg/L。較佳含量為10~100mg/L。一實施形態中,胺基酸之含量為0.
1mg至25g/L。
抗壞血酸及/或其鹽之含量,為吡咯喹啉醌及/或其鹽之含量的2質量倍以上,例如可為2.5質量倍以上、5質量倍以上、10質量倍以上、20質量倍以上。抗壞血酸及/或其鹽的量越多越具有抑制吡咯喹啉醌含量減少的效果,但可使用抗壞血酸以最大為吡咯喹啉醌及/或其鹽之重量的300質量倍。抗壞血酸之含量為,30~120,000 mg/L、較佳為1,000~10,000mg/L。
作為本發明所使用之胺基酸,未特別限定,可任意選擇。可舉例如選自由組氨酸、異白胺酸、白胺酸、賴氨酸、甲硫胺酸、苯基丙胺酸、羥丁氨酸、色胺酸及頡胺酸所成群中之必須胺基酸;選自由甘胺酸、天門冬胺、天門冬胺酸、丙胺酸、精胺酸、半胱胺酸、谷氨醯胺、麩胺酸、脯胺酸、絲胺酸及酪氨酸所成群中之非必須胺基酸;選自由茶胺酸、鳥胺酸、瓜氨酸及牛磺酸所成群中之游離胺基酸等。胺基酸之含量較佳為0.
1mg~25g/L、又較佳為50mg~1,500mg/L、又更較佳為100mg~1,200mg /L。
在必須胺基酸之中以頡胺酸、白胺酸、異白胺酸的分支鏈胺基酸為較佳。在非必須胺基酸之中以甘胺酸為較佳。在游離胺基酸之中以茶胺酸或鳥胺酸為較佳。
胺基酸的鹽未特別限制,可舉例如,相對於羧基等的酸性基,與鈉、鉀等的鹼金屬的鹽,與鈣、鎂等的鹼土類金屬的鹽,與銨鹽、鋁鹽、鋅鹽,與三乙胺、乙醇胺、嗎啉、吡咯賴氨酸、哌賴氨酸、哌嗪、二環己酯胺等有機胺的鹽,與精胺酸、賴氨酸等的鹽基性胺基酸的鹽。可舉例如,相對於胺基等的鹽基性基,與鹽酸、硫酸、磷酸、硝酸、氫溴酸等無機酸的鹽,與乙酸、檸檬酸、安息香酸、馬來酸、富馬酸、酒石酸、琥珀酸,單寧酸、酪酸、海苯酸(hibenzate)、撲酸、庚酸、癸烷酸、茶氯酸(teoclate)、水楊酸、乳酸、草酸、杏仁酸、蘋果酸等有機羧酸的鹽,與甲磺酸酸、苯磺酸、p-甲苯磺酸等有機磺酸的鹽。
眾所周知吡咯喹啉醌的基本功能為微粒線體的活性化、腦功能改善、抗氧化。相對於此,胺基酸具有消除疲勞、睡眠的改善、運動功能上昇、精神安定功能。本發明提供具備吡咯喹啉醌與胺基酸兩者的功能之飲料。
分支鏈胺基酸為單獨亦因分解而發生臭氣,但本發明者發現飲料中因混合含有吡咯喹啉醌及/或其鹽而變成容易發生臭氣。因此,藉由搭配抗壞血酸降低吡咯喹啉醌與分支鏈胺基酸的反應性而抑制臭氣發生是有效的。
本發明的飲料可使用於pH1~9。運動飲料的情況,較多以使pH為酸性而發出清涼感,較佳可調整為pH1~4、又較佳可調整為pH2.
5~5.
5。這樣的運動飲料更進一步可搭配胺基酸,但認為這樣的運動飲料特別適合本發明。
使用於調整pH的物質如為可添加於食品之物質則未特別限制。可使用磷酸、檸檬酸、乳酸、乙酸、酒石酸、蘋果酸、抗壞血酸。抗壞血酸有作為還原劑的功用,亦可使用作為pH調整劑。又,加上這些的鹼金屬鹽而發揮緩衝效果可使pH不發生變化。
調整pH,較佳為可使用抗壞血酸、檸檬酸、抗壞血酸鈉、檸檬酸鈉。
含有吡咯喹啉醌及/或其鹽還原劑,特別是使用抗壞血酸及/或其鹽的情況,混合並經過特定的期間後,例如經過20分鐘以上後混合胺基酸為較佳。混合胺基酸及/或其鹽與吡咯喹啉醌及/或其鹽後混合還原劑的情況,無法發生效果。
本發明係含有吡咯喹啉醌及/或其鹽與其含量的2質量倍以上之含量的抗壞血酸及/或其鹽之混合物可使用作為飲料製造的原料。以使用混合物而可進行安定之生產。
在本發明的飲料中,如不妨礙預期的效果,則可搭配一般使用於飲料中的各種添加物。作為這樣的添加物可舉例如,甜味劑、酸味料、保存料、色素類、抗氧化劑等。又,因應目的,可添加果汁、咖啡抽出物、茶葉抽出物、乳成分等的食品成分。
例如,可因應作為目的之飲料的風味而搭配甜味劑。如為可使用於飲料食品之甜味劑,搭配之甜味劑的種類例示為單醣、二糖、異構化糖、寡糖、多糖類、糖醇、水飴、人工甜味劑等,但未特別限制。
具体的,作為單醣,可舉例如甘油醛、蘇阿糖、阿拉伯糖、木糖、核糖、核酮糖、木酮糖、葡萄糖、甘露糖、半乳糖、塔格糖、阿洛糖、醛糖、古洛糖、艾杜糖、塔洛糖、山梨糖、阿洛酮醣、果糖等。
作為二糖,可舉例如海藻糖、蔗糖、乳糖等。
作為寡糖,可舉例如麥芽三糖、棉子糖、環糊精。其中因環糊精可增強抗壞血酸的吡咯喹啉醌分解抑制效果故較佳。
作為多糖類,可舉例如水飴、氫化水飴等。
作為糖醇,可舉例如蘇糖醇、紅蘚糖醇、核糖醇、阿糖醇、木糖醇、塔羅糖醇、山梨醣醇、甘露醇、艾杜糖醇、半乳糖醇、肌醇等。
作為人工甜味劑,可舉例如糖精、阿斯巴甜、醋磺內酯鉀、蔗糖素等。這些之中亦以醋磺內酯鉀和山梨醣醇為較佳。
本發明的飲料可為碳酸飲料。可在調製飲料時搭配碳酸。
本發明的飲料為,包含以日本國之食品衛生法為基礎所通知之定義的清涼飲料水。
作為本發明的飲料的形態,如含有胺基酸之飲料則未特別限制,但例示如運動飲料、果實飲料、茶飲料、咖啡飲料、乳性飲料、碳酸飲料、功能性飲料、能量飲料等。這些之中亦以運動飲料為較佳。
本發明的飲料,可用容器裝填。容器的形態未做任何限制,可填充於瓶、罐、或寶特瓶等密封容器,而作為容器裝填飲料。
(飲料之製造方法)
本發明為,提供包含於混合吡咯喹啉醌及/或其鹽與其含量的2質量倍以上之含量的抗壞血酸及/或其鹽後,混合胺基酸及/或其鹽的步驟,飲料之製造方法。藉由抗壞血酸使吡咯喹啉醌含有量低減抑制效果為很高,但有在短時間的接觸上效果降低,喪失吡咯喹啉醌的安定性的可能性。因此,混合吡咯喹啉醌與抗壞血酸後經過特定的期間後,較佳為20分鐘~70分鐘以上、又較佳為30分鐘~60分鐘以上經過後再混合胺基酸為較佳。藉此,維持吡咯喹啉醌的安定性。混合胺基酸及/或其鹽與吡咯喹啉醌及/或其鹽並經過特定的期間再混合還原劑的情況,也有無法產生效果的情況。
吡咯喹啉醌與胺基酸的接觸以在溶液中進行為佳,彼時之溫度為-10℃~120℃、較佳為10℃~90℃,又較佳為室溫、例如在20~25℃程度進行則容易使用。
飲料製造上,吡咯喹啉醌及/或其鹽抗與壞血酸及/或其鹽為與其他的成分同時、或經過特定的期間後,例如接觸20分鐘以上後,可由得到的混合物再加上胺基酸和其他成分。
甜味劑、pH調整用的成分,存在於與抗壞血酸接觸時亦不產生問題,但較佳為混合吡咯喹啉醌與抗壞血酸之後再搭配。於例中說明飲料中搭配甜味劑,吡咯喹啉醌及/或其鹽與抗壞血酸及/或其鹽於水中,特定的期間經過後,例如接觸30分鐘以上,於其後,添加甜味劑、胺基酸及/或其鹽。
調合必要成分後,經過殺菌步驟、填充於瓶的步驟而完成容器裝填的飲料。殺菌步驟可使用加熱滅菌、過濾滅菌。加熱殺菌可以於90℃以上30秒以上的條件進行。因應必要可進行殺菌,可不限制條件而使用。
(飲料製造的原料)
本發明,作為上記飲料的原料,提供含有吡咯喹啉醌及/或其鹽、與其含量的2質量倍以上之含量的抗壞血酸及/或其鹽的混合物、與胺基酸的組合。以使用含有吡咯喹啉醌、與其含量的2質量倍以上之含量的抗壞血酸之混合物可以安定的狀態進行吡咯喹啉醌生產。
本發明藉由以下實施例更進一步詳細說明,但不因這些而限定本發明之範圍。同業者,可將本發明進行種種變更、修飾而使用,這些亦包含於本發明的範圍。

1・確認抗壞血酸的效果
(比較例1)無添加抗壞血酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、甘胺酸的濃度成為100mg/L。將得到的水溶液以30℃保存5日,HPLC分析的結果,PQQ的77%變化成IPQ。
(實施例1)添加抗壞血酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為400mg/L、抗壞血酸的濃度成為10g/L。將得到的水溶液以室溫(25℃)保存1日。以水稀釋使該水溶液使吡咯喹啉醌二鈉鹽成為40mg/L、抗壞血酸成為1g/L,對此以添加甘胺酸成為100mg/L般將得到的水溶液以30℃保存5日。
將水溶液以HPLC分析的結果,變化成為IPQ的吡咯喹啉醌為0%。藉由添加抗壞血酸抑制反應成為IPQ的結果,製造出了保持PQQ的飲料。
(實施例2)添加抗壞血酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為400mg/L、抗壞血酸的濃度成為5g/L。將得到的水溶液以室溫(25℃)保存1日。以水稀釋使該水溶液吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸的濃度成為0.
5g/L,將對此添加甘胺酸使其濃度成為100mg/L所得到的水溶液以30℃保存5日。
將水溶液以HPLC分析的結果,變化成為IPQ的吡咯喹啉醌為0%。藉由抗壞血酸抑制反應成為IPQ的結果,製造出了保持PQQ的飲料。
(實施例3)添加抗壞血酸、酸味料
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為400mg/L、抗壞血酸的濃度成為1g/L。將得到的水溶液以室溫(25℃)保存1日。以水稀釋將該水溶液吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸的濃度成為100mg/L,以對此添加甘胺酸成為100mg/L、檸檬酸成為2g/L將得到的水溶液以30℃保存5日。
將水溶液以HPLC分析的結果,變化成為IPQ的吡咯喹啉醌為0%。藉由添加酸味料與抗壞血酸抑制反應成為IPQ的結果、製造出了保持PQQ的飲料。
2・對於BCAA之抗壞血酸的效果
(比較例2)無添加抗壞血酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、頡胺酸的濃度成為500mg/L、白胺酸的濃度成為500mg /L、異白胺酸的濃度成為500mg/L。調合時的pH為5.3。將得到的水溶液以50℃保存2日後,進行HPLC分析之際,變化成為IPQ的吡咯喹啉醌為51%、吡咯喹啉醌為49%。因吡咯喹啉醌與BCAA的組合發生強烈的醛臭。
(實施例4)添加抗壞血酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸成為1g/L、頡胺酸的濃度成為500mg/L、白胺酸的濃度成為500mg/L、異白胺酸的濃度成為500mg/L。調合時之pH為3.6。將得到的水溶液以50℃保存2日後,進行HPLC分析之際,變化成為IPQ的吡咯喹啉醌為0%。因此,知道對於BCAA亦不為藉由胺基酸使吡咯喹啉醌反應成為IPQ。亦未產生分支鏈胺基酸起因之臭氣。
3・因甜味劑的影響之檢討
(實施例5)添加甜味劑醋磺內酯K(pH3)
調合水溶液使原料的成分成為以下的濃度。一起混合吡咯喹啉醌二鈉與抗壞血酸的情況,混合兩者經過30分鐘後混合其他的成分。將得到的水溶液以50℃保存4日間後,進行HPLC分析並測定吡咯喹啉醌二鈉鹽的回收率。
將其結果表示於以下的表。
相對於實施例5及6的飲料以HPLC測量的結果PQQ可回收幾乎100%,不含抗壞血酸之比較例皆於混合液中PQQ之含量顯著減少。
(實施例7)添加糖醇及臭氣的測定
作為甜味劑使用糖醇而試驗抗壞血酸的效果。加上PQQ的回收率,對於BCAA的臭氣亦得到確認。
調合水溶液使原料的成分成為以下的濃度。有關調合係以例說明一起混合吡咯喹啉醌二鈉與抗壞血酸的情況,調合為,以將兩者混合經過30分鐘後混合其他的素材而進行。於110mL的玻璃製容器裝入得到的水溶液100mL,以50℃保存3日。於容器返回室溫後,聞氣味。又,對於水溶液進行HPLC分析並測定吡咯喹啉醌二鈉鹽的回收率。
其結果表示於以下的表。
實施例7及8不只保護PQQ,亦抑制了臭氣。
(實施例9)添加抗壞血酸、果糖
作為甜味劑使用果糖並試驗抗壞血酸的效果。
吡咯喹啉醌二鈉鹽40mg/L、抗壞血酸1g/L、檸檬酸1200mg/L、檸檬酸鈉100mg/L、頡胺酸40mg/L、白胺酸100mg/L、異白胺酸40mg/L、果糖50g/L成為般調合水溶液。於混合吡咯喹啉醌二鈉與抗壞血酸30分鐘後混合其他的素材。混合時的pH為3.0。以50℃保存3日後,藉由HPLC分析求得PQQ之含量時,PQQ的回收率為81%。與山梨醣醇比較,使用果糖的情況的安定性下降。然而,與比較例的比較可明顯知道,抗壞血酸可賦予其安定化,抗壞血酸對吡咯並喹啉醌含量減少的抑制效果很大。
(比較例7)無添加抗壞血酸、添加果糖
調合水溶液,使吡咯喹啉醌二鈉鹽成為40mg/L、檸檬酸成為1,200mg/L、檸檬酸鈉成為100mg/L、頡胺酸成為40mg/L、白胺酸成為100mg/L、異白胺酸成為40mg/L、果糖成為50g/L。調合時的pH為3.0。以50℃保存3日後,藉由HPLC分析求得PQQ之含量時,PQQ的回收率為25%。如不存在抗壞血酸則PQQ無法充分回收,失去飲料中PQQ的安定性。
4・接觸時間的檢討
(實施例10)飲料調製前的60分鐘的接觸
混合1%(w/w)抗壞血酸水溶液10mL與1%(w/w)吡咯喹啉醌二鈉鹽水溶液2mL,在室溫(20℃)攪拌60分鐘。於此混合液加入其他的原料調製成以下之組成的飲料。
吡咯喹啉醌二鈉鹽 40mg/L
抗壞血酸 100mg/L、檸檬酸 1,200mg/L
檸檬酸鈉 100mg/L
白胺酸 200mg/L
山梨醣醇 50g/L
將得到的飲料以50℃保存3日,藉由HPLC分析求得PQQ之含量時,PQQ的回收率為97%。
(實施例11)飲料調製前的30分鐘的接觸
混合1%(w/w)抗壞血酸水溶液10mL與1%(w/w)吡咯喹啉醌二鈉鹽水溶液2mL,在室溫(20℃)攪拌30分鐘。於此混合液加入其他的原料調製成以下之組成的飲料。
吡咯喹啉醌二鈉鹽 40mg/L
抗壞血酸 100mg/L、檸檬酸 1,200mg/L
檸檬酸鈉 100mg/L
白胺酸 200mg/L
山梨醣醇 50g/L
將得到的飲料以50℃保存3日,藉由HPLC分析求得PQQ之含量時,PQQ的回收率為95%。
(實施例12)無飲料調製前的事前接觸(同時混合)
同時加上1%(w/w)抗壞血酸水溶液10mL與1%(w/w)吡咯喹啉醌二鈉鹽水溶液2mL與其他的原料並調製成以下之組成的飲料。
吡咯喹啉醌二鈉鹽 40mg/L
抗壞血酸 100mg/L
檸檬酸 1,200mg/L
檸檬酸鈉 100mg/L
白胺酸200mg/L
山梨醣醇50g/L
將得到的飲料以50℃保存3日,藉由HPLC解析求得時PQQ之含量時,PQQ的回收率為91%。
得知於飲料的調製前以於事前使抗壞血酸與吡咯喹啉醌接觸可安定地調合飲料,又,其安定效果為接觸時間越長越是改善。
5・對於游離胺基酸之抗壞血酸的效果
(比較例8)無添加抗壞血酸、添加茶胺酸
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、茶胺酸的濃度成為400mg/L般同時添加各成分(pH6.4)。得到的溶液以60℃保存7日。以HPLC測量的結果,PQQ的回收率為29%。
(實施例13)添加抗壞血酸、茶胺酸、γ-環糊精
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸的濃度成為2,000mg/L、檸檬酸的濃度成為3,000mg/L、茶胺酸的濃度成為400mg/L、γ-環糊精的濃度成為5,000mg/L般同時添加各成分(pH2.6)。將得到的水溶液以60℃保存7日。以HPLC測量的結果,PQQ的回收率為100%。
(實施例14)添加抗壞血酸、茶胺酸、γ-環糊精、異構化糖
調合水溶液使吡咯喹啉醌二鈉鹽成為40mg/L、抗壞血酸成為2,000mg/L、檸檬酸成為3,000mg/L、茶胺酸成為400mg/L、γ-環糊精成為5,000mg/L、異構化糖成為50g/L般同時添加各成分(pH2.7)。異構化糖為使用王子的異構化糖(果糖分55%以上)(以下同樣)。將得到的水溶液以60℃保存7日。以HPLC測量的結果,PQQ的回收率為96%。
(比較例9)無添加抗壞血酸、添加鳥胺酸
同時調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、鳥胺酸的濃度成為400mg/L(pH7.5)。將得到的水溶液以60℃保存7日。於HPLC上之PQQ的回收率為29%。
(實施例15)添加抗壞血酸、鳥胺酸、γ-環糊精
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸的濃度成為2,000mg/L、檸檬酸的濃度成為3,000mg/L、鳥胺酸的濃度成為400mg/L、γ-環糊精的濃度成為5,000mg/L般同時添加各成分(pH2.5)。將得到的水溶液以60℃保存7日。以HPLC測量的結果,PQQ的回收率為100%。
(實施例16)添加抗壞血酸、鳥胺酸、γ-環糊精、異構化糖
調合水溶液使吡咯喹啉醌二鈉鹽的濃度成為40mg/L、抗壞血酸的濃度成為2,000mg/L、檸檬酸的濃度成為3,000mg/L、鳥胺酸的濃度成為400mg/L、γ-環糊精的濃度成為5,000mg/L、異構化糖的濃度成為50g/L般同時添加各成分(pH2.7)。將得到的水溶液以60℃保存7日。以HPLC測量的結果,PQQ的回收率為98%。
由以上的結果,得知藉由添加抗壞血酸,使存在游離胺基酸下亦無由吡咯喹啉醌反應生成IPQ之情事。又,藉由添加環糊精,明顯可防止因胺基酸使吡咯喹啉醌減少的效果。
[產業上之利用性]
根據本發明,藉由搭配抗壞血酸,成為可提供即使含有胺基酸,亦能維持吡咯喹啉醌之含量之飲料。特別是胺基酸為分支鏈胺基酸的情況,其固有的臭氣亦藉由抗壞血酸而被抑制。
Claims (13)
- 一種飲料,其特徵為,含有吡咯喹啉醌及/或其鹽、與胺基酸及/或其鹽、與抗壞血酸及/或其鹽之飲料,其中抗壞血酸及/或其鹽之含量為吡咯喹啉醌及/或其鹽之含量之5質量倍以上,且pH為酸性之飲料。
- 如請求項1之飲料,其中,吡咯喹啉醌及/或其鹽之含量為10~400mg/L。
- 如請求項1或2之飲料,其中,胺基酸含有非必須胺基酸、分支鏈胺基酸或游離胺基酸之中至少1種類。
- 如請求項3之飲料,其中,非必須胺基酸為甘胺酸、分支鏈胺基酸為頡胺酸、白胺酸或異白胺酸、游離胺基酸為茶胺酸或鳥胺酸。
- 如請求項1之飲料,其中,胺基酸之含量為0.1mg~25g/L。
- 如請求項1之飲料,其中,pH為1~4。
- 如請求項1之飲料,其中,更含有甜味劑。
- 如請求項7之飲料,其中,甜味劑為醋磺內酯鉀及/或山梨醣醇。
- 如請求項1之飲料,其中,更含有環糊精。
- 一種請求項1~9中任一項之飲料之製造方法,其中,包含混合吡咯喹啉醌及/或其鹽、與吡咯喹啉醌及/或其鹽之含量之5質量倍以上之含量之抗壞血酸及/或其鹽,並混合得到之混合物與胺基酸及/或其鹽的步驟。
- 如請求項10之製造方法,其中,混合吡咯喹啉醌及/或其鹽與抗壞血酸及/或其鹽並經過20分鐘以上後混合胺基酸及/或其鹽。
- 一種含有吡咯喹啉醌及/或其鹽、與吡咯喹啉醌及/或其鹽之含量之5質量倍以上之含量之抗壞血酸及/或其鹽之混合物、與胺基酸及/或其鹽之組合。
- 如請求項12之組合,其中,為使用於飲料之製造。
