Description
水性媒体をカートリッジに通して、前記飲料濃縮物を希釈することにより飲料を作るステップと、
飲料を容器中へ分配するステップと
を含む方法であって、カートリッジ中へ導入される水性媒体に対する飲料濃縮物の全体の重量比が、約10:1から約1:10である。
飲料濃縮物を含む濃縮物チャンバーを収容するカートリッジと、
濃縮物チャンバーの下流にある、飲料の放出のための出口と、
濃縮物チャンバーと出口とをつなぐ流路であって、飲料濃縮物を水性媒体と混合して飲料を作るための手段を含む流路と
を備え、
流路の最大断面積がXであり、最小断面積がYであり、X対Yの比が約20以上であり、飲料濃縮物がアルギン酸塩及び/又は熱可逆性ゲル化増粘剤を含む非ゲル状の飲料液体濃縮物又は固体の飲料濃縮物である、飲料分配システムを提供する。
飲料濃縮物のカートリッジ、
飲料濃縮物のカートリッジの下流にある、飲料の放出のための出口と、
飲料濃縮物のカートリッジから出口までをつなぐ流路と、
飲料を作るために飲料濃縮物を水性媒体と混合する手段であって、飲料濃縮物のカートリッジに一体化されるか又は流路内に収容される手段と
を備え、
流路が2mm2以下の断面積を有する開口部を備え、飲料濃縮物が非ゲル状の飲料液体濃縮物であるか、又はアルギン酸塩及び/若しくは熱可逆性ゲル化増粘剤を含む飲料濃縮物である、
飲料分配システムを提供することができる。
飲料濃縮物のカートリッジと、
飲料濃縮物のカートリッジの下流にある、飲料を放出するための出口と、
飲料濃縮物のカートリッジから出口までをつなぐ流路と、
飲料を作るために飲料濃縮物を水性媒体と混合する手段であって、飲料濃縮物のカートリッジに一体化されているか、又は流路内に収容されている手段と
を備え、
流路がエダクターを備え、飲料濃縮物がアルギン酸塩及び/若しくは熱可逆性ゲル化増粘剤を含む非ゲル状液体濃縮物又は飲料濃縮物である、飲料分配システムを提供することができる。
飲料システムはカートリッジを収容し、カートリッジは増粘剤を含む非ゲル状飲料液体濃縮物を収容する1つ又は複数のチャンバーを備え、チャンバーは流路によって飲料システムの出口まで接続され、
この方法は
カートリッジのチャンバー(複数可)又はチャンバー(複数可)から出口までをつなぐ飲料システムの流路のいずれかにおいて、飲料濃縮物を水性媒体と混合するステップと、
飲料濃縮物及び水性媒体の混合物を、先に規定したような開口部又はくびれ部(エダクターなど)に通すステップと、
飲料を容器中に分配するステップと
を含み、カートリッジに導入される水性媒体に対する飲料濃縮物の総重量比は約10:1から約1:10である。

1.アルギン酸ナトリウム(0.25%)及びメチルセルロース(0.25%)の混合(対照、実施例1に記載される本発明の処方)
2.増粘剤なし
3.メチルセルロースのみ(0.25%)、及び
4.アルギン酸ナトリウムのみ(0.25%)
表1:
・増粘剤を含まないサンプルは、全体のDODにおいて有意に異なると認識され、方向的には濃密さがより少なく口及びのどのコーティングがより少ない。
・メチルセルロースのみを含むサンプルは、2つの増粘剤の組み合わせを含有する参照サンプルよりも有意に濃密さが少なく口のコーティングが少ないため、有意に異なっている。及び
・アルギン酸のみを含むサンプルは全体のDODにおいて有意に異なると認識され、方向的には2つの増粘剤の組み合わせを含有する参照サンプルよりも濃密さが少なく、口のコーティングが少なく、質感においてわずかにクリーミーさが大きい。
1.1 キサンタンガム(CP Kelcoより) 飲料全体の0.05〜0.2%の重量
1.2 低メトキシルペクチン(CP Kelcoより) 0.05〜0.5%
1.3 カッパ−カラギーナンガム(CP Kelcoより) 0.05〜0.35%
1.4 イオタカラギーナン(CP Kelcoより) 0.05〜0.35%
1.5 ラムダカラギーナン(CP Kelcoより) 0.05〜0.6%
1.6 アルギン酸ナトリウム(Grinsteadより) 0.045〜0.5%
1.7 メチルセルロース(Dowより)0.045〜0.25%
1.8 ヒドロキシプロピルメチルセルロース(Dowより)0.1〜0.5%
Claims (13)
- 飲料調製システム用のカートリッジであって、
水性媒体を前記カートリッジ中に導入するための注入口と、
前記注入口の下流にあり、前記カートリッジから飲料を放出するための出口と、
前記注入口から前記出口までをつなぐ流路と、
を備え、
前記流路は、その内部に合計で約0.01から約5重量%の1つ又は複数の増粘剤を含有する非ゲル状飲料液体濃縮物を含む、
ことを特徴とするカートリッジ。 - 飲料調製システム用のカートリッジであって、
水性媒体を前記カートリッジ中に導入するための注入口と、
前記注入口の下流にあり、前記カートリッジから飲料を放出するための出口と、
前記注入口から前記出口までをつなぐ流路と、
を備え、
前記流路は、その内部にアルギン酸塩及び/又は熱可逆性ゲル化増粘剤を含む非ゲル状飲料液体濃縮物を含み、
前記濃縮物中の前記増粘剤の総濃度は約0.01から約5重量%である、
ことを特徴とするカートリッジ。 - 前記熱可逆性ゲル化増粘剤は、メチルセルロース及びヒドロキシプロピルメチルセルロースのうち1つ又は複数から選択されることを特徴とする請求項2に記載のカートリッジ。
- 前記アルギン酸塩は、アルギン酸ナトリウム、アルギン酸カリウム、及びアルギン酸アンモニウムのうち1つ又は複数から選択されることを特徴とする請求項2又は請求項3に記載のカートリッジ。
- 前記飲料液体濃縮物は、アルギン酸塩及びメチルセルロースを約1:5から約5:1の重量比で含み、
前記メチルセルロース及び前記少なくとも1つのアルギン酸塩は、合わせて約0.01から約5重量%の量で存在する、
ことを特徴とする請求項1から4のいずれか一項に記載のカートリッジ。 - 前記流路は、前記飲料液体濃縮物を充填したチャンバーを収容し、
前記流路は、前記飲料液体濃縮物が充填された前記チャンバーの下流に2mm2以下の断面積を有する開口部をさらに備える、
ことを特徴とする請求項1から5のいずれか一項に記載のカートリッジ。 - 前記飲料濃縮物は、コーヒー抽出物、好ましくは溶解性コーヒーを含むことを特徴とする請求項1から6のいずれか一項に記載のカートリッジ。
- 前記飲料濃縮物は、アルギン酸塩を含み、カルシウムイオン封鎖剤をさらに含むことを特徴とする請求項1から7のいずれか一項に記載のカートリッジ。
- 前記飲料濃縮物中の前記増粘剤は、好ましくは糖の水和及び/又は高剪断混合などの水和技術により、液体成分中で水和されることを特徴とする請求項1から8のいずれか一項に記載のカートリッジ。
- 濃縮物中に溶解したアルギン酸塩及び/又は熱可逆性ゲル化増粘剤を含む非ゲル状飲料液体濃縮物を収容する請求項1から9のいずれか一項に記載のカートリッジから飲料を分配する方法であって、
水性媒体を前記カートリッジに通して、前記飲料濃縮物を希釈することにより飲料を作るステップと、
前記飲料を容器中に分配するステップと、
を含み、
前記水性媒体に対する前記飲料濃縮物の総重量比は、約10:1から約1:10である、
ことを特徴とする方法。 - 約50℃から約100℃の温度で前記水性媒体を前記カートリッジ中へ導入することを特徴とする請求項10に記載の方法。
- 飲料濃縮物を含む濃縮物チャンバーを収容するカートリッジと、
前記濃縮物チャンバーの下流にある、飲料を放出するための出口と、
前記濃縮物チャンバー及び前記出口をつなぐ流路であって、前記飲料濃縮物を水性媒体と混合するための手段を含む流路と、
を備え、
前記流路は、前記濃縮物チャンバーの下流に2mm2以下の断面積を有する開口部を備え、
前記飲料濃縮物は、合計で約0.01から約5重量%の1つ若しくは複数の増粘剤を含有する非ゲル状飲料液体濃縮物であるか、又は合計で約0.01から約5重量%のアルギン酸及び/若しくは熱可逆性ゲル化増粘剤を含有する固体濃縮物である、
ことを特徴とする飲料分配システム。 - 飲料濃縮物を含む濃縮物チャンバーを収容するカートリッジと、
前記濃縮物チャンバーの下流にある、飲料を放出するための出口と、
前記濃縮物チャンバー及び前記出口をつなぐ流路であって、前記飲料濃縮物を水性媒体と混合する手段を含む流路と、
を備え、
前記流路の最大断面積はXであり、最小断面積はYであり、X対Yの比は約20以上であり、
前記飲料濃縮物はアルギン酸塩及び/若しくは熱可逆性ゲル化増粘剤を含む非ゲル状飲料液体濃縮物又は固体飲料濃縮物である、
ことを特徴とする飲料分配システム。
