- アルドースとグルコン酸からなる、マルトビオン酸カルシウム、ラクトビオン酸カルシウム、セロビオン酸カルシウム、イソマルトビオン酸カルシウム、コージビオン酸カルシウム、ニゲロビオン酸カルシウムから選ばれる一つ又は組み合わせであるアルドン酸二糖類のカルシウム塩を含有することを特徴とする食品の煮崩れ防止剤。
